I’ve been craving popcorn lately.

So all this week I’ll be posting some of the different and yummy popcorn recipes I’ve found. And I found some really good ones! And they have all been family and kid tested. After making all these popcorn recipes, I sent them to my daughter’s class.

This stuff is addicting.

Not overly peanut buttery.

And it’s light.

And Crisp.
But not hard.

I can totally see adding peanuts to this.

Peanut Butter Popcorn

Peanut Butter Popcorn

Peanut Butter Popcorn

Ingredients

  • 8-10 cups of popped popcorn
  • 2/3 cups brown sugar, packed
  • 2/3 cup light corn syrup
  • 2 1/2 tablespoons butter
  • 1/2 teaspoon salt
  • 1/2 cup creamy peanut butter
  • 1 teaspoon vanilla

Instructions

  1. Place popcorn in a Large mixing bowl, the biggest one you have is the best one for this.
  2. Line a baking sheet (jelly roll pan) with parchment paper, spray with cooking spray and set to the side.
  3. Combine brown sugar, corn syrup, butter and salt in a medium saucepan.
  4. Stir to combine over medium heat. Continue at medium heat and bring to a boil, stirring occasionally. Cook for an additional 3 minutes.
  5. I used a thermometer to see what temperature it would get to and surprise, it rose right to 240 degrees at 3 minutes on the nose.
  6. Remove from heat and stir in peanut butter and vanilla.
  7. Once combined, pour over your popcorn. Gently toss to coat all the popcorn.
  8. Then spread popcorn out on your prepared baking sheet. Place in a preheated 250 degree oven for 1 hour, stirring every 15 minutes.
  9. Remove from oven and let cool completely.

Notes

Feel free to use microwave or old fashioned popcorn. Whatever makes you happy or you have on hand.

 While popcorn is baking to that wonderful crispness, be sure to scrape the bowl and pot for any leftover peanut butter goodness. Don’t let it go to waste. Please don’t let it go to waste.

When time is up, remove from oven and let cool completely.

    Oooh I love this. I also enjoy the idea of drizzling some chocolate over it once it’s done…I wonder that would be better to do before, or after baking? Hmmm 😛

      I actually tried some mini chocolate chips on some of this, I dropped them on right after they came out of the oven, they melted really fast and didn’t look pretty in the pictures but tasted great!

    I just made caramel popcorn and this just gave me another idea. My neighbor loves peanut butter so I’ll make him this for his birthday next month! Sounds soo delicious.

    I make a peanut butter popcorn similar to this, but it isn’t baked. It is best eaten right away, as the popcorn does not stay crisp. You can adjust the recipe for how much you need. For 1 batch of popcorn (1/4 cup unpopped kernels) boil 1/3 cup corn syrup & 1/3 cup sugar for 1 minute. Remove from heat and add 1 tsp vanilla and 1/3 cup peanut butter, mix well and then pour over popped corn, mix well and eat. YUM! It’s quick no waiting an hour to let it bake.
