I have to confess something. It’s time I came out of the closet (or pantry in this case.)
I don’t make everything from scratch. There I said it.
I always have a box of this stuff in my cabinet.
I can make biscuits from scratch. And I can make some awesome pancakes from scratch when I feel like it. But when I’m in a hurry, I pull this stuff out.
The other day I was looking for a recipe for something, I don’t even remember what, and I came across this recipe.
If you don’t have Bisquick (or you don’t like to use it) you can make up this Homemade Biscuit Mix to use as a substitute.

Nutty Toffee Bars
adapted from Betty Crocker
Nutty Toffee Bars
Ingredients
- 1/2 cup butter, softened
- 3/4 cup brown sugar
- 2 cups Bisquick or Homemade Biscuit Mix
- 3/4 cup chocolate chips
- 1/4 cup coconut
- 1/2 cup chopped nuts (I used pecans)
Instructions
- Combine butter and brown sugar, mixing until creamy and smooth.
- Add Bisquick and mix until well blended.
- Press dough into a greased 8 x8 or 9 x 13 pan.
- Bake in a preheated 350 degree oven for 25-35 minutes, until golden brown.
- Immediately after removing from oven, spread chocolate chips over top of crust and let sit for 2-3 minutes.
- Then, using the back of a spoon, spread chocolate to cover evenly.
- Sprinkle coconut and nuts over top and gently press in to secure. Let cool completely before cutting.
Notes
(I used a 8 x8 like the recipe recommends but next time I'll use the 9 x 13 for a thinner crust.)

I love Bisquick. I grew up on the stuff. I always have cake and brownie mix in my pantry. I love cooking from scratch, but hey, sometimes a cake mix is the way to go (and sometimes it tastes better too!) These bars look scrumptious!

Bisquick is awesome, so many things you can do with it. I often make “semi homemade” tasty treats. Only when I have actual time to myself, can I make something from scratch..lol Love this recipe, thanks!

I’m definitely a Bisquick fan too. How could you possibly go wrong making these luscious puppies?! I have a similar recipe that uses crescent rolls for the crust. It’s all good! Glad you shared!

While there’s nothing wrong with using Bisquick, I’ve discovered a delicious, simple, made-from-scratch mix that is essentially Bisquick. It can be used just like Bisquick and in any recipe calling for Bisquick. It comes from a marvelous recipe book called Make-A-Mix. Recipe for Quick Mix:
– 8&1/2 cups all-purpose flour
– 1 tablespoon baking powder
– 1 tablespoon salt
– 2 teaspoons cream of tartar
– 1 teaspoon baking soda
– 1&1/2 cups non-fat powdered milk
– 2&1/4 cups vegetable shortening
Sift all dry ingredients together in a large bowl. Cut in shortening until evenly distributed and resembling coarsely ground cornmeal. Store in a large, airtight container in a cool, dry place. Best if used within 12 weeks or so (but it often lasts longer than that). Ta da! Homemade Bisquick with a few minutes worth of time involved in mixing it up! 🙂

Linda… I have that book plus More Make A Mix Cookery. I bought them back in the 80’s and have used them a lot. Some of their recipes are now dated but the mixes are still awesome!

Linda H —- I don’t use shortening. If I were to store it in the freezer, could I use butter or coconut oil and just bring it to room temperature prior to continuing with a recipe? I have seen this before and was just thinking about looking it up so I could have it on hand. I think it may have originally come from Tupperware (make a mix). I am trying to change to more wholesome foods. Thanks for the recipe.

I imagine butter or coconut oil would work fine. I would definitely refrigerate or freeze it if it has butter in it, but I think coconut oil would probably last for some time at room temperature, just like shortening. 🙂
