Peanut Butter Chocolate Chip Muffins-great for a quick breakfast or a tasty afternoon snack
Who doesn’t love peanut butter and chocolate, right?
Dinners, Dishes and Desserts posted this recipe the other day and I knew I would be making it.
And it’s a muffin, that makes it healthy doesn’t it? Ok, I might be pushing it, but Peanut butter does have protein in it, so there!

Peanut Butter Chocolate Chip Muffins
Ingredients
- 2 cups all purpose flour
- 1 1/2 teaspoons salt
- 1 tablespoon baking powder
- 1 cup milk
- 2 large eggs
- 2/3 cup sugar
- 1 cup peanut butter
- 1/3 cup vegetable oil
- 1 cup chocolate chips
Instructions
- Heat oven to 375 degrees. Spray muffin pan with non stick spray.
- Stir together flour, salt, baking powder and chocolate chips in a large bowl. Combine milk, eggs, sugar, peanut butter and oil in a separate bowl; combine ingredients until just moistened. Do not over beat.
- Fill 18 muffin tins. Top with a few chocolate chips. Bake for 14 minutes.

Post script: Joan passed away in her sleep on October 22, 2015. She went to bed feeling nauseous (which is one of the signs of heart attacks in women) and never woke up. Please learn the signs of heart attack in women (they are different than for men) and if you have high blood pressure or family history of heart disease, don’t brush off nausea as just the flu. Joan made it very clear that she wanted her work to continue in the event of her death so her family is working to keep Joan’s dream alive. I tried the Peanut butter Chocolate Chip muffin recipe and I thought they would be good, but I was really disappointed. They were nasty and had no flavor to them. I followed the recipe to the letter and even had me husband try them and he was wondering what he put in his mouth. So much so that he spit it in the trash. Sorry about the bad review, but they were nasty.

We also made these and they were not good. They were somewhat salty and had a strange taste to them. I’ve been baking for 23+ years so am very experienced with this, however something just wasn’t right. I think the salt needs to be omitted and 1 T of baking powder seems like a lot. I was expecting a sweet peanut butter muffin with sweet milk choc chips (we used ghirardelli brand) but they were dry, salty and just not good. We also only baked them for 12-13 min but still dry. I’m sorry for the review but I hate wasting ingredients on stuff that ends up not being edible. My hubs and kids didn’t like them either.

made these today and they came out so good! didnt have flour so i used bisquick and i added vanilla. so yummy!

Just made these twice, the first batch with Australian peanut butter was not great. But our peanut butter is very nutty and much less sweet then American so I used American Skippy peanut butter instead from Costco and reduced it down to 3/4 cup to combat the dryness. They came out perfect! I can see how using different brands from different countries can affect it so do try it using a nice sweet peanut butter, it really made a difference!
