Vanilla Cupcake for One – a special jumbo-sized single-serve treat for you!
This past week was my sweet boy KJ’s half-birthday. Yes, I am and will continue to be THAT mom. Ya know the one, the one always doing the over-the-top things for her kid. That’s me.
I guess you could say I learned that from my mom. She was like the head of the PTO at school, was always at the school for picture day, and ran the school store. She also made homemade birthday cakes, even when I was in the hospital.
Something I’ve realized tho, is that as a parent, I want to celebrate every milestone, even little ones. Because every time my little kiddo does something for the first time that’s it. He won’t ever do it for the first time again.
Like just the other day, he learned how to blow raspberries. And It was so fun watching him figure out that he could do that. Now he just knows how to do it.
Anywhos, but being the extra mom means that we’re celebrating half-birthdays. And this was his very first half-birthday, so we made him 1 jumbo-sized Vanilla Cupcake for One, and let him nibble off of it, while me and Kal (KJ’s dad) ate the rest of it.
Here’s how to make it.
Vanilla Cupcake for One
- 1/4 cup of granulated sugar
- 2 tablespoons of butter, melted
- 1 tsp of vanilla
- egg whites from 1 egg
- 4 tablespoons of all purpose flour
- 1/4 teaspoons of baking powder
- 1 teaspoon of milk
- pinch of salt
For the frosting :
- 4 tablespoons of softened butter
- 1/2 cup of powdered sugar
- splash of vanilla
Preheat the oven to 350 degrees and line one cup of a jumbo sized cupcake pan.
In a small bowl, combine the flour, salt, and baking soda. In a separate small bowl, combine the butter, sugar, vanilla, egg white, and milk. Add the flour mixture in, and stir until combined.
Pour batter into the lined cup, and bake for 25-27 minutes, or until lightly golden and a toothpick comes out clean.
Let cool completely before frosting.
To make the frosting, Whip the butter, powdered sugar, and vanilla for 5 minutes, until fluffy, making sure to scrape down the sides and bottom of the bowl. It may take a little longer to make due to it being such a small amount. Spoon the frosting into a piping bag and pipe it onto the cupcake.
You can use 3-4 tablespoons of a store bought frosting as well, but homemade is always better in my opinion.
