I hate it when hubby goes away on business. I just don’t sleep well without him snoring (loudly, like a freight train) next to me. I sleep with the TV on, to drown out his snoring, but when the snoring’s not there, it’s just not right. I even wake up early, so not me.

Hubby came back from a trip yesterday. I slept well last night. I didn’t wake up until he brought me my coffee in bed. Yes I’m spoiled.

So I wanted to make him something special for breakfast. Hubby loves Honey Buns, you know those buns, wrapped in plastic, with a shelf life of a million years. Kids go nuts for them too.

This cake is perfect. I’ve made it many times. I originally found it over at The Country Cook. I’ve tried changing up the recipe but honestly, when it’s right, it’s right. I will say you can substitute plain yogurt for the sour cream, I’ve done that and it’s just as good. And it does make it a bit healthier for you.

Honey Bun Cake

Honey Bun Cake

Ingredients

  • 1 cup brown sugar
  • 2 teaspoons cinnamon
  • 1 box yellow cake mix
  • 1 cup sour cream (or plain yogurt)
  • 4 eggs
  • 3/4 cup vegetable oil

for Glaze

  • 2 cups powdered sugar
  • 5-6 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions

  1. Blend brown sugar and cinnamon in a small bowl and set aside. Stir together cake mix, sour cream, eggs and oil.
  2. I just whisked it all together, lumps are fine. Spoon half of your batter into a greased or sprayed 9 x 13 pan (or something close) Spread to the edges. Sprinkle brown sugar mixture over top, it'll seem like a lot but use it all.
  3. Spoon remaining batter over top, try to cover top evenly but don't try to spread it. Using a knife, swirl batter, just run the knife in a zig-zag.
  4. Bake in a preheated 350 degree oven for 40-45 minutes, until a toothpick comes out clean.
  5. While cake is baking, mix up your glaze. Combine powdered sugar, milk and vanilla until smooth. Once cake is done, remove from oven and drizzle glaze over top.
  6. Let set for five long minutes before cutting and serving.

    I’m TOTALLY making this, Joan. Looks incredible! Love me some Honey Buns. And isn’t it weird that despite the loud snoring and general disruptions from the other person, you don’t sleep well when it ISN’T around? Proves you love each other, I think ๐Ÿ˜‰ no wonder he loves you–you make this amazing cake for breakfast!

      It has to be love, he went on a business trip and had to share a room. The other guy actually got up in the middle of the night and got another room, lol!

    Very sweet of you to make him something yummy for when he got back! When my husband is gone, I sleep with the tv on just because I like the noise. I have a hard time going to seep without it!

    Yeah I can’t sleep without my snoring husband too, but I don’t get coffee in bed upon his return! I would love to try this for breakfast for my family! It would be such a welcome change from cereal!

    Joan, I don’t know what we did until you started sharing your recipes with us. This honey bun cake is the bomb. Your family is so lucky to have such a good cook, O what I would give to be your little dog to get scraps but O my goodness dogs cant eat Chocolate!!! I may have to rethink this one, LOL…

    Those who snore more then likely have sleep apnea. They need to have a sleep study and get diagnosed properly and then get a CPap machine which will help the one with it as well as the one who is affected by it. I have a CPap and it has worked wonders for me. On the other hand I will be making this cake for a Women’s Gathering.

    Where you say 1 box yellow cake mix I’m guessing a basic sponge mix will do the job?

      If you don’t have access to boxed cake mix, you can make your own cake mix. I Am Baker has a great one here for Yellow Cake Mix

    This looks so good! I’d love to make this but there are no boxed cake mixes where I live, do you have a scratch yellow cake recipe that you recommend to use with this?

    I just made this for my daughter an after school snack but there was a rather large piece I could not fit on the cake plate so I am forced to eat it. lol This is an amazing cake! Thank you!!

    Made this yesterday after a friend posted a link on FB. It is wonderful! We are a gluten free family so I used two boxes of Betty Crocker Gluten free cake mix. I will be making it again for my family and friends.
