Chocolate Sugar Cookies-so simple yet so good!
Sometimes you just get in a mood. You want something. Something to nibble on. You look through all the cabinets. Nothing looks good. You stand in front of the refrigerator, with the door open. Letting all the cold air out, for at least 5 minutes. Still, nothing.
So you walk away. Still craving something, but you don’t know what. You don’t want chips, you don’t want to make a sandwich. The leftovers from the day before looked good but you’re saving them for dinner.
So you take out some butter but have no idea what you’ll make. You know all good things start with butter.
You go do some chores, maybe a little work. As a food blogger, you’ve learned to multi-task. You can edit photos in between loads of laundry.
You finally return to the kitchen to make something with the butter. You open your baking cabinet and it all just comes together.

Chocolate Sugar Cookies
Ingredients
- 1 cup butter, softened
- 1 1/2 cups brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 3/4 cup cocoa powder
- 2 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/2 cup granulated sugar for rolling
Instructions
- Cream together butter and brown sugar with a mixer until fluffy, about 5 minutes.
- Add in eggs, one at a time, mixing after each addition, and then vanilla.
- Combine cocoa powder, flour, baking soda and salt. Slowly add flour mixture to butter mixture. Mix well.
- Refrigerate dough for one hour.
- Using a cookie scoop, scoop dough and place into granulated sugar, roll around to coat. Place sugar coated dough on lightly greased or parchment lined baking sheet, space cookies 2 inches apart. Bake in a preheated 350 degree oven for 9-10 minutes.
- Let cookies cool on baking sheet for 10 minutes before removing to racks to cool completely. Store in an airtight container.

Like in your intro to these cookies, I was looking for something for my boyfriend and I to snack on but we had NOTHING in the pantry. So I figured why not look up a recipe? I had all the ingredients for these so I started baking away! Dough is in the fridge right now and oh my lord it already tastes great! (I know it’s not advised to eat raw dough but hey, gotta live a little once in a while right?) So looking forward to how these pan out!

In my opinion you can never go wrong adding a few teaspoons of instant coffee to chocolate recipes. Will definitely enhance the chocolate.

Tried these cookies this past weekend they turned out great. One person commented about not having a strong enough chocolate flavor, so I added a teaspon of espresso powder with the other dry ingredients and it perked up the chocolate flavor a lot. Regular instant coffe granules would do the same.

I love these cookies. They are chewy, chocolatey, and perfectly sweet. However, It is extremely difficult to view your site. when trying to “X” out the ads, the site reloads. And with it, reloads the ads. The ads make the sit extremely slow to load and scroll through, often leaving blank spots on the page. even typing this comment is taking forever. Just an FYI.

So, OMG. These are amazing as is. However…..I have to share my modification: used 2/3 special dark cocoa plus the rest natural cocoa to make 3/4 c, added a cup of bittersweet chips chopped up and……a tablespoon of water with four teaspoons of instant coffee dissolved in it added with the vanilla. Now I only wish I had chocolate covered coffee nibs to add! GREAT, GREAT recipe. If you are wondering if you should make it, DO!!!!

Easy recipe–nice but not wow. But that’s what I expect of a sugar cookie–a comforting taste and texture. Will make these again.
