I have a confession. I never use my waffle iron. I’ve had it for 2 years and I think I’ve used it twice. When you have 3 teenage kids, all hungrily waiting at the table for food. Making one waffle at a time just isn’t productive. And I like to eat with the family. But after making at least 2 waffles per child, then finally making one for myself, they’re done.

I know I could make all the waffles and then call them to the table but there’s something about a waffle, hot off the iron. It’s just better than one that’s sat around warming for 10-15 minutes.

So waffles as a breakfast food don’t happen at my house. Any time I think waffles, I just switch it up to pancakes. I’ve got a huge electric griddle, I can make 6 pancakes at a time.

That doesn’t mean I don’t want to use my waffle iron. Especially as the summer months get into full swing. I don’t want to heat up the kitchen using the oven. We still need our sweets.

Using the waffle iron to make cookies is the perfect solution. And since these are technically waffles, you could serve them for breakfast!

Brownie Waffle Cookies

Brownie Waffle Cookies

Ingredients

  • 1/3 cup shortening
  • 1/4 cup semi-sweet chocolate chips
  • 1 large egg, beaten
  • 1/3 cup sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • 3/4 cup all purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Place shortening and chocolate chips in a microwave proof bowl. Microwave on high for 50-60 seconds, until shortening is completely melted. remove from microwave and stir until chips are completely melted and mixture is smooth. Set aside to cool.
  2. In a mixing bowl, Beat together, egg, sugar, milk and vanilla. Add in Chocolate mixture and mix again.
  3. Combine flour, baking soda and salt. Stir into batter, just until combined. Do not over mix.
  4. Preheat waffle iron on medium heat.
  5. Drop batter by tablespoon full onto waffle iron. (depending on the shape of your waffle iron, you may be able to make more than one cookie at a time) Cook for about 3 minutes, just until edges start to become crisp. Remove from waffle iron and let cool completely on racks.
  6. Lightly dust with powdered sugar if desired. Store in an air tight container.

  4. Believe me we have made these for years and years. Although my recipe uses cocoa…But then we always add a chocolate frosting to them and they were the hit of the snacking world some 30 years ago or so. But my son grew up but still once in a while he will say mom would you and I do.

  6. Hi Joan! I hear you on the waffle baker. . we do mix it up from time to time and make waffles but you’re right, the pancakes are much easier and faster and you can make more at the same time. . AND my husband always makes the pancakes in our house so I always vote for pancakes with my kids to get out of making waffles! :P love this idea!!! Now, I will have to break out the waffle baker for this one!
