Using the dark cocoa powder took this biscotti to the next level. Deep rich chocolate flavor. I probably could have left the chocolate chips out but really, everything’s better with a few chocolate chips thrown in!

Double Chocolate Biscotti

Double Chocolate Biscotti

Ingredients

  • 6 tablespoons butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1/4 teaspoon vanilla extract
  • 2 cups all purpose flour
  • 1/2 cup dark cocoa (I used Hershey's Special Dark)
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Cream butter and sugar together, add in eggs, one at a time, beating well after each addition. Add in vanilla.
  2. In separate bowl, stir together flour, cocoa, baking soda and salt. Add flour mixture to Butter mixture in thirds, making sure all dry ingredients are incorporated before adding more. Fold in chocolate chips.
  3. Shape dough into a 12 x 4 inch log and place on a well greased baking pan (or use parchment paper) Bake in a preheated 350 degree oven for 30 minutes.
  4. Remove from oven and let rest for 5 minutes. Cut loaf into 3/4 inch slices and place back on baking sheet, cut side down. Bake again for 8 minutes then turn cookies over and bake for an additional 5 minutes.
  5. Completely cool cookies on a rack then store in an airtight container.

Notes

regular cocoa can be substituted for the dark cocoa

This Biscotti was so incredible, it disappeared from my kitchen after dinner. I went to go grab one, just for “inspiration” so I could write this post and gone! I searched the Kitchen, then the entire house. I’m pretty sure the container will magically appear in one of my children’s book bags to share with their friends at school.

  4. I definitely just learned how to make biscotti and it was so easy! I love this double chocolate take on it! You can never go wrong with chocolate….and definitely not with chocolate x 2! Yum!!

  5. This is my first attempt at Biscotti. Is it normal to be somewhat crumbly when slicing it into the 3/4″ pieces? It just felt like there were a lot of crumbs, so didn’t know if The dough was too stiff after mixing, or perhaps it didn’t need to full 30 minutes of baking time?

    • I use a bread knife to slice the biscotti to help avoid crumbling when slicing. I’ll add a note to the recipe. Hope you were still able to enjoy your Biscotti.

    These can be made using a gluten free flour blend (I used my hack of a Cup4Cup hack using King Arthur GF AP Flour and powdered milk). I added 1/4 tsp of baking powder and sprinkled the top with Sugar in the Raw before baking. They were SOOO good! Thanks for the recipe.

  10. I made these and they were great. I know they are supposed to be hard, but I felt like I was going to break my teeth biting them. :-) would baking them for less time make them a little softer?

  14. I just made this! Its doing the first baking as I type. I have to say the dough is amazing and good enough to eat like that! . If that is any indication as to what it will taste like baked OMG I can’t wait to try it! I added about a cup of chopped walnuts to this also. I think walnuts can only make anything double chocolate even better!. I’m hoping it will turn out OK once baked! The Chocoholics of the world thank you!!
