Tiktok’s Green Goddess Salad – this salad is so refreshing and makes for a healthy snack, meal for brunch, or as an appetizer!
I want to start off by giving credit to Melissa @bakedbymelissa on Tiktok for creating this delicious salad. I literally go to her page every day to see what amazing recipe(s) she’s made that day.
The Green Goddess Salad is not for the weak–and by that I mean, it calls for A LOT of chopping. A whole head of cabbage, a few cucumbers, and green onions.
It also calls for a lot of ingredients to go in the dressing, and some of that is my fault for changing the recipe up and adding extra ingredients.
That being said, for the dressing, the ingredients are olive oil, rice vinegar, nuts (I used walnuts), spinach, lemon juice, lime juice, basil, chives, an avocado, a shallot, a jalapeno, nutritional yeast, and cilantro.
However, once all the chopping is done, the recipe isn’t too hard.
So you’ll chop up the cabbage, cucumbers, and green onions (I chopped them pretty finely, especially the onions because I’m picky), and throw them into a nice-sized bowl.
Put that bowl to the side, and grab your blender.
Throw in the rest of the ingredients–olive oil, rice vinegar, lemon juice, lime juice, nutritional yeast, nuts, avocado, shallot, jalapeno, basil, chives, and cilantro. Blend those babies up.
Now put it all together. Make sure to mix it up very well so all the salad is covered in the dressing.
The dressing will be pretty thick because of the avocado but very tasty, and it also won’t look like a lot or enough but trust me, it both coats and tastes amazing.
I know this isn’t the exact recipe, but I wanted a salad that would fit my standards, because like I said, I’m picky and typically not a salad fan.
I taste-tested throughout the process and made my own measurements based on what tasted good to me.
- a whole head of cabbage
- 2-4 cucumbers (depends on the size)
- 1 bunch of green onions
- 1/2 cup of olive oil
- 1 tbsp rice vinegar
- 2 tbsp lemon juice
- 2 tbsp lime juice
- 2 tbsp nutritional yeast
- a handful of nuts (your choice, I used walnuts)
- an avocado
- a shallot
- a jalapeno
- 1 bunch of chives
- about 1 cup of spinach
- a few fresh basil leaves
- a few fresh cilantro stems
- Finely or roughly chop the cabbage, cucumbers, and green onions. Put in a large bowl and set aside.
- In a blender, blend the olive oil, rice vinegar, lime juice, lemon juice, nutritional yeast, avocado, shallot, jalapeno, nuts, chives, spinach, basil, and cilantro.
- Pour dressing on top of the salad and mix until all salad is covered.
- Serve with chips, on toast, or by itself.
