Strawberries and Cream White Chocolate Bark
What’s your favorite store to shop in?
For me, it has to be Target. I always make sure I have plenty of time when I go there. I wander every department, every isle.
They have everything! The moment you walk in the door, you get that mini bargain section. Usually seasonal, always fun to just look through and see what catches my eye.
I go straight to the sale racks for clothes. With 2 girls, I’m always looking for any bargains I can find. Unless I have the kids with me, I get out of the clothing pretty quick. A cursory glance at the shoe department and then it’s all about the housewares.
I start with the linens. You never know, if something’s on sale that catches my eye, we could have a the start of a redecorating project. Something as simple as a shower curtain can give new life to the same old towels and accessories in a bathroom.
Once I drift into the kitchenwares, watch out. I’m fairly good about self control, but if it’s on sale…remember this tart pan?
Finally, my last stop is always the grocery section. We don’t have one of those super Targets with a full grocery store inside but we do pretty good. I always wander up and down each isle, checking on the sales.
And then I saw it. Freeze Dried Strawberries. In the nut isle. I immediately grabbed 2 bags. I had plans for these bags. Big plans.
It was only a few days before I went to use the first bag. I should have hidden them better. To be fair, they’re good, really good. An easy snack for an 11 year old to grab after school.
I did manage to snag the other bag and make up this bark. I think the bark disappeared faster than the dried strawberries. After all, how can you go wrong with strawberries and white chocolate?

Strawberries and Cream Chocolate Bark
Ingredients
- 12 ounces white chocolate Almond bark or candy melts
- 1 cup freeze dried strawberries
Instructions
- Melt chocolate according to package directions. (I prefer the double boiler method)
- On a parchment lined tray, arrange dried strawberries close together, reserving a few to garnish with.
- Pour melted chocolate over strawberries. Garnish with remaining strawberries.
- Let cool completely and set up before cutting to desired serving size.

I went to Target to get the ingredients and the only dried strawberries they had did not look pretty like yours in the picture. They looked dull and almost brown. I checked the expiration date and they are good. Do you know of any other place I could find these or can you share the brand you use? My local grocery stores don’t carry them so it looks like Target is my only choice. Also, I used Toll House chips but they did not melt – actually they started to burn in the double boiler and then turned to dust. I bought these new also so I don’t know what went wrong there. I went back to the store and got bark and that worked great.

Love the color contrast of this, but not going to lie – I think I would prefer dark chocolate ๐ I, too, have freeze dried strawberries and even bananas from Trader Joe’s I haven’t dug into yet. Now I know what to make!

What a great idea to use the dried strawberries! I love strawberries and cream! And I have the same problem in Target – I always find myself in sections completely unrelated to what I went there for, just browsing. ๐

Why do you use freeze dried strawberries? Won’t fresh strawberries work? I usually crush up peppermint candy canes and add it to the white bark. I like your strawberry idea!

Hi Katie, fresh strawberries have too much moisture and would spoil too quickly. Also there would be temperature control issues. Using the freeze dried strawberries allows this to be kept a room temperature and will stay fresh longer (at least a week or 2)

I made one batch of this bark at Thanksgiving, to see if the family liked it. Everyone loved it but not sure I will be able to find the dried strawberries locally after the holidays. I have bought several packages and will buy more as long as my local grocery store carries them.

I am SO making these! I love, love, love white chocolate in any shape or form and adore strawberries. I’m also with you; Target is my big box store of choice. I avoid going To Walmart as much as I can. The atmosphere in Target just feels so much better (and I love their stuff).

All right…I have never heard of freeze-dried strawberries. Would they be the same as regular dried strawberries or is there something about freeze-dried. Are they too chewy? Are freeze-dried strawberries chewy. I went to my favorite Kitchen specialty store and they didn’t know what I was asking. They have regular dried strawberries. Could it be that it’s because I’m in Canada? Target recently came here, so maybe they would have them? I can check. I just need some clarification. Thanks. Because I am dying to make these.

Hi Michelle, I got my freeze dried strawberries at Target, right next to all the nuts. Freeze dried strawberries aren’t hard but they are dry-er than a regular dried strawberry. You can use dried strawberries, just watch the moisture. Using regular dried fruit, your shelf life for this will be shortened to probably just a few days.

No, you don’t want to use frozen strawberries with this recipe, the moisture from the strawberries will seize up your chocolate. Best to try and find the freeze dried strawberries. I got mine at Target, right next to the nuts.

FYI… I ordered a HUGE can of the Freeze Dried Strawberries from Walmart (online) an they delivered today! I can’t wait to make my first batch! If it passes my husband (he is my taste tester), I plan to give it as Christmas gifts to our neighbors! I am SOOOO excited to try it!

What size pan did you use? I tried my first batch today. It hardened okay but the bark is rather “thin”. Also, it turned my white chocolate a “pink” color. Did I stir it too much or should I have stirred it at all? I used large 19×23 cookie pan. Should I have used a 9×13 cake pan? I really want it to look as pretty as yours!
