Peanut Butter Chocolate Chip Granola Bars -just a few ingredients in these simple-to-make bars will give you the energy to get through the day! I can’t believe it’s almost school time again. My kids go back August 3. Where does the summer go?
We’re so excited for kids to get out of school, then a week or 2 later, we’re ready for them to go back. Then when we realize it’s time to go back, we’re not ready.
My kids are ready (or they will be once we finish school shopping.) They miss their friends, the teachers and all the extra activity.
My middle child, Cassie, is already doing band camp. I drop her off at 7:15 am to catch the bus to the high school, then don’t pick her back up until 4:30. These are the “short” days. Once school starts, it’s out of the house by 6am and home around 6pm. Too long in my opinion but that’s a conversation for another day.
My kids like to take a sack lunch, even if they are buying lunch at school. Part of it will get eaten on the ride to school, some between classes (hidden behind a locker door), and if there’s anything left, it’ll get eaten between school and after-school practice.
This is a typical lunch for my kids. Mostly healthy. A sandwich, some fruit, carrot or celery sticks, a yogurt, something sweet like these granola bars, water (we partially freeze the water so it acts as an ice pack as well as a drink) and Shamrock Farms Chocolate on-the-go mmmmilk.

Peanut Butter Chooclate Chip Granola Bars
Ingredients
- 1/2 cup peanut butter
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 1 cup quick cooking oats
- 1/2 cup chopped nuts (I use pecans)
- 1/2 cup semi-sweet chocolate chips
Instructions
- Stir together peanut butter, honey and vanilla in a mixing bowl until smooth. Add oats, nuts and chocolate chips and stir until oats are completely coated.
- Gently press mixture into a greased 8x8 square baking pan. Bake in a preheated 325 degree oven for 15 minutes, just until edges start to brown. Remove from oven and let cool completely before cutting into bars.
- Store in an airthight container.
Notes
Line baking pan with parchment paper for ease in removing from pan.

My favorite thing to pack in my son’s lunch is slices of turkey, cheese, green pepper, and bread or crackers in Ziploc® brand Snack Bags with mayo on the side—so he can self-stack his own sandwich! He just loves it! He also loves it when I put in a dip with veges and a fruit cup!

My go to lunch is homemade chocolate chip banana nut bread with a smear of nut butter, sliced bananas and a drizzle of honey served alongside some chips and a tall glass of chocolate milk.
When my kids are in school I like to make them monster cookies or some type of cereal bar like Rice Krispie Treats or S’mores Bars.
