Classic Shortbread Cookies – a classic soft and buttery cookie that melts in your mouth and is the perfect addition for Santa’s cookie plate!
These Classic Shortbread Cookies are amazing. Like so amazing. I think they’re my new favorite cookie.
I will admit that some of the reason I love them so much is because they were so easy to make. Normally, I’m terrible at making cookies.
Something always happens and the cookie is messed up, either undercooked, cooked too long, over mixed the batter, something!
But these cookies came out perfectly the very first time I made them! And now that I know I can make them, I’ll be making them a thousand more times because they are delicious!
And kid friendly, so they’re perfect for Christmas and have your little elves help make them for Santa’s plate!
Classic Shortbread Cookies
For this recipe, you’ll need:
- 2 sticks of softened unsalted butter (1 cup)
- 3/4 cup of powdered sugar
- 1 1/2 cups of all-purpose flour
- 1/4 cup of cornstarch
- 1/2 teaspoon of salt
- Vanilla extract (measure with your heart)
- any kind of Christmas sprinkles
The first thing you’re going to want to do is preheat the oven to 300 degrees and line a cookie sheet with parchment paper or spray it with nonstick spray.
In a stand mixer or using a handheld mixer, cream the butter, powdered sugar, and vanilla extract together until light and fluffy. This process should take about 5 minutes.
In a separate bowl, sift the all-purpose flour, cornstarch, and salt and then use a fork to whisk it together.
Slowly add the flour mixture into the creamed butter until it’s all completely mixed together.
Dust your hands with cornstarch and roll about a tablespoon of the cookie dough into a ball and place it on the cookie sheet.
Once they’re all rolled out and on the cookie sheet, dip a fork into cornstarch and press it into each cookie to make an indentation.
Sprinkle a few sprinkles on top then place in the oven and bake for 14-16 minutes or until the cookies are set.
When they’re finished baking, let rest on the cookie sheet for about 5 minutes before moving to a cooling rack or eating them straight from the pan!
I’m definitely going to have to make these a few more times before Santa comes, because these are not going to last long in my house!

- Bake for 14-16 minutes or until the cookies are set then let rest for 5 minutes before moving to a cooling rack or eating straight from the pan!
