With Summer practically over and no need for a beach body anymore, these Frozen S’mores Bars bring us our favorite part of Fall in a form to cool us off in this hot weather!
With that being said, Fall is one of my favorite seasons. My all-time favorite season is Winter of course, but Fall is a close second.
It’s just that, here in middle Georgia, we don’t get true Fall weather until like the last 2 weeks of Fall, and then it’s winter. And even our Winter is short-lived.
I’m sure if I lived in a more northern state, I’d appreciate Fall a little more, but Winter is my favorite because it actually gets cold.
I promise all this rambling has a purpose, I just wanted to give some background.
Anywhos, its still blistering hot down here, but these s’mores are a delicious frozen treat designed to bring s’more to life in the summer heat.
Frozen S’mores Bars
- 1 sleeve of graham crackers
- 1/4 cup of butter, melted
- 1 cup of chocolate chips, melted
- 1 cup of heavy whipping cream
- a can of sweetened condensed milk
- 1 can of marshmallow fluff
- about 1/2 cup of marshmallows
In a plastic bag, smash the graham crackers into fine crumbs. Add the butter into the bag and shake the bag until the butter is completely combined.
Press the graham cracker crumbs into a parchment paper lined 8×8 baking dish. Place the dish into the freezer.
Melt the chocolate chips. I melted the chocolate chips using the microwave, but you could also do the double-boiler method.
Pour the melted chocolate onto the graham cracker crust, spread it out as evenly as possible, then place the dish back in the freezer.
Using a stand mixer or handheld mixer, whip the heavy whipping cream on high for a few minutes until a stiff peak forms.
Use a spatula to fold the sweetened condensed milk and marshmallow fluff into the whipped cream.
Pour this into the baking dish. Top off the dish by sprinkling the marshmallows on top. Place back into the freezer for at least 4 hours.
After about 4 hours, the Bars should be frozen and ready to serve!
