Marshmallow Treats – whether it’s for the leprechaun at the end of the rainbow or for the Easter Bunny, these treats are for sure an easy dessert for the special occasion!
Lucky Charms is one of the best cereals, but sadly it’s not one of our regular GO-TOs in this house.
Not because we don’t want it, but because Kal (my boyfriend) ONLY wants the marshmallows. I would rather not only eat the cereal that’s left over after he’s picked through it.
But with both St. Patrick’s Day and Easter coming up, I need something that’s quick to whip up, is yummy, and will make everyone happy at the family dinner.
And basically, these are rice crispy treats, but with extra ooey-gooeyness and the delicious Lucky Charms marshmallows.
I made these today just to see how I would like them while Cassie (my sister) went to pick her son up from school, and by the time they got back to my house, they were ready to eat. Edward (her son) was so excited and couldn’t wait to eat one!
And Cassie and Kal came to an agreement that she could take half of them home and Kal could have the other half. LOL, as long as they get eaten, I don’t care who takes them!
Marshmallow Treats
- 1 family-size box of Lucky Charms
- a 1lb 8 oz bag of jumbo marshmallows
- 1 stick of unsalted butter
In a large pot, melt the butter and marshmallows on low heat, making sure to continuously stir so it doesn’t burn at the bottom of the pan. This should take about 10 minutes.
Open the cereal and pick out about 1 cup worth of the lucky Charms marshmallows, and set aside for garnish.
Once the marshmallows and butter are completely melted together, remove from heat, and pour in the whole box of cereal. Fold the cereal into the melted marshmallows, until each piece of cereal is completely coated.
Line a 9×13 pan with parchment paper, then pour the coated cereal into it. Spread it out and flatten it gently with a spatula. Garnish with the marshmallows that were set aside earlier. Place in the fridge to set for about 30 minutes.
Once it’s completely cool, it’s ready to serve!
