What happened to fall?

Seriously, just a few days ago, I was wearing shorts and a tee shirt and then this morning, I get in the truck and it’s 40 degrees outside. Burrrr!

Where was that month of mildly cooler weather that we could open the windows, air out the house, drape a sweater over our shoulders for fashion not to keep from freezing. I really look forward to those couple of  fashion friendly weeks. Before I have to drag out the winter coat and cover up all my cute sweaters.

This seems to happen every year here in Georgia.

If we’re lucky, we get one full week to save on our electric bills. One week where we can turn off the air conditioning before we turn on the heat.

At least thats how my friends and neighbors do it. Me, I’ll tough it out. I’ll resist turning on the heat for as long as I possibly can.

Caramel Apple Toffee Cookies

I bring out the throw blankets and place them all over the house. On the back of the sofas, over the comfy chair in the basement. The kids all have extra blankets on their beds. It is nice snuggling on the sofa together (to keep warm) and watch tv together as a family (to keep warm.)

One other thing I do when the weather suddenly changes like this.

I bake cookies. It’s all part of the “mom plan” to force the family to gather together in the kitchen, warmed by an oven heated to 350 degrees.

Caramel Apple Toffee Cookies

It works every time.

Since it is fall, I wanted a fall inspired cookie. I always loved caramel apples as a kid but lets be honest, nobody eats all the apple, at least I never did. Just to sticky, messy. I’d nibble all around the apple, trying to get all the caramel I could.

Eating it a caramel apple as a cookie is just easier. Maybe too easy.

At least with the apple chips, I can pretend these cookies are healthy.

Caramel Apple Toffee Cookies

Yield: 4 dozen cookies

Caramel Apple Toffee Cookies

Ingredients

  • 1 cup butter, room temperature
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 1 teaspoon caramel flavored extract
  • 2 eggs
  • 2 1/2 cups all purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 bag (8 ounces) Heath Toffee Bits
  • 1 bag (2.5 ounces) crispy Apple Chips

Instructions

  1. Cream butter with sugars until creamy. Add in caramel extract and eggs. mix well.
  2. Combine flour, baking soda and salt then slowly add flour mixture to butter mixture. Blend well. Crush apple chips in bag. Fold in apple chips and toffee bits into dough.
  3. Using a small scoop or a teaspoon, drop dough, about a tablespoon, onto a parchment lined baking sheet 2 inches apart. Bake in a preheated 350 degree oven for 8-9 minutes, be careful not to burn. Remove from oven and let cookies rest on baking sheet for about 10 minutes before removing to racks to cool completely.
