Strawberries and Cream French Toast Casserole – a fun twist on the classic French Toast, brioche bread, sweet strawberries, and creamy cheesecake filling, make for a super easy breakfast to whip up in the morning or prepare the night before!
French toast is easily one of the BEST breakfast items ever! It’s one of the items I always get at IHOP when I’m not in the mood for pancakes or the Belgian waffle.
Kal (my boyfriend, I don’t know if I’ve ever told y’all his name before) was able to go to work a little later than usual the other day so I made this casserole the night before. I popped it in the oven around 6 AM, when the baby woke me up.
I have to say, until I start working as a nurse, this stay-at-home mom thing is pretty fun. And I love that I’ve been blessed with being able to stay home these past couple of months after nursing school finished to get back some of that bonding time.
Anywho, I was on a time clock with this breakfast, but luckily, having prepped it the night before saved me so much time in the morning. It was done 55 minutes after I put it in the oven.
Strawberries and Cream French Toast Casserole
For the macerated strawberries:
- about 1 pound of strawberries
- 1/4 cup of granulated sugar
- 1 teaspoon of lemon juice
For the Casserole:
- 1 loaf of brioche bread (can be homemade or storebought)
- 8 ounces of cream cheese
- 1/2 powdered sugar
- 1 tablespoon of vanilla
- 6 eggs
- 2 cups of heavy cream
- 1/2 cup of granulated sugar
- 1/4 teaspoon of salt
Cut the tops off of the strawberries, then quarter them, and toss them in a large bowl. mix in the lemon juice and sugar, and stir until the strawberries are evenly coated. Place in the fridge until needed.
Arrange a rack in the middle of the oven and preheat it to 350 degrees. Cut the bread into about 1 inch cubes. They don’t have to be perfect, I got about half way through cutting and just started to rip them into similar shaped and sized pieces. Spread them out on to a baking sheet as evenly as possible, and toast in the preheated oven for 12-15 minutes. Let cool.
In a mixing bowl, beat the cream cheese, and powdered sugar until light and fluffy. Set aside.
In another mixing bowl, beat the eggs, heavy cream, granulated sugar, and salt.
Place half of the toasted bread in the casserole dish. spoon about half of the cream cheese cheesecake filling onto the bread. Place the rest of the bread in the dish, and spread the rest of the filling on top. Pour the egg mixture onto the toasted bread, making sure each piece gets soaked.
At this point, you could stop, cover the dish and place in the fridge for up to a day, or you could bake in the oven at 350 degrees for 55-60 minutes. Spoon the strawberries on top and serve while warm!

- Cut or tear the bread into 1-inch size pieces, spread the bread pieces evenly on a cookie sheet, and bake in a 350-degree oven for 10-12 minutes, until lightly toasted. Set aside to cool before using.
- In a mixing bowl, beat the cream cheese and powdered sugar until light and fluffy. In a separate bowl, beat the eggs, vanilla, heavy cream, granulated sugar, and salt until well combined.
- Add half of the bread pieces into a 9x13 casserole dish. spoon half of the cream cheese cheesecake filling onto the bread, add the rest of the bread and the rest of the cream cheese. Pour the egg mixture into the dish, making sure to coat each piece of bread.
- At this point, you could cover the dish and store for up to 24 hours before baking, or go ahead and bake it for 55-60 minutes. Spoon the strawberries over top, dust wiht powdered sugar, and enjoy!
