And then one night I was wandering Pinterest and I spied a post from Salad in a Jar for a spaghetti casserole. Scooter’s Spaghetti. Paula is awesome, if you read her about page, she’s just the type of person I would be friends with. And after reading the ingredients I knew this would be perfect. I also knew that I would meet up with resistance on even trying this because of the green peppers and onions but I didn’t care. It sounded so good to me. And sometimes you just have to make things that you want.
And let me tell you, this was completely worth it, yum, yum!
Scooter’s Spaghetti
adapted from Salad in a Jar
8 oz uncooked spaghetti (I used angel hair)
1 lb ground beef
1 large can spaghetti sauce
1 tablespoon butter
1/2 cup green bell pepper, chopped (about a half a pepper)
1/3 cup onion, chopped
8 ounces cream cheese
2 tablespoons milk
1/4 cup mozzarella cheese (not in the original recipe)
Parmigiana cheese
French’s Fried onions (small can)
I varied from the recipe right off the bat, using my meat sauce for the beef and sauce portion of the recipe.
Cook spaghetti according to package directions, you want it to be al dente. Drain and set aside.
Add cream cheese and milk to green peppers and onions, stir until creamy and blended.
Now to put it all together.
Put a good layer of sauce on the bottom of a baking dish, I used a 8 x 8 square dish.
Next are the noodles, Cream Cheese mixture, the rest of the sauce, and your cheese. The original recipe didn’t have the mozzarella cheese but I had some in the fridge I wanted to use up.
Bake in a 350 degree oven for 25 minutes then top with french fried onions and bake an additional 5 minutes.
This stuff is awesome! Those of us that ate it loved it!
