Spaghetti Challenge-Scooter’s Spaghetti

Published March 7, 2012

Scooter’s Spaghetti
Scooter's Spaghetti from ChocolateChocolateandmore
It’s The Crazy Cooking Challenge again. This time it’s spaghetti. I have to tell you I was worried about doing this challenge. My family is sooooooo picky about spaghetti sauce. It’s taken years to come up with a sauce that tastes good, that everyone will eat.

And then one night I was wandering Pinterest and I spied a post from Salad in a Jar for a spaghetti casserole. Scooter’s Spaghetti. Paula is awesome, if you read her about page, she’s just the type of person I would be friends with. And after reading the ingredients I knew this would be perfect. I also knew that I would meet up with resistance on even trying this because of the green peppers and onions but I didn’t care. It sounded so good to me. And sometimes you just have to make things that you want.

And let me tell you, this was completely worth it, yum, yum!

Scooter's Spaghetti from ChocolateChocolateandmore

Scooter’s Spaghetti
adapted from Salad in a Jar

8 oz uncooked spaghetti (I used angel hair)
1 lb ground beef
1 large can spaghetti sauce
1 tablespoon butter
1/2 cup green bell pepper, chopped (about a half a pepper)
1/3 cup onion, chopped
8 ounces cream cheese
2 tablespoons milk
1/4 cup mozzarella cheese (not in the original recipe)
Parmigiana cheese
French’s Fried onions (small can)

I varied from the recipe right off the bat, using my meat sauce for the beef and sauce portion of the recipe.

Cook spaghetti according to package directions, you want it to be al dente. Drain and set aside.

Place chopped green pepper and onion in a microwaveable bowl with butter and microwave on high for 4 minutes.

Add cream cheese and milk to green peppers and onions, stir until creamy and blended.

Now to put it all together.
Put a good layer of sauce on the bottom of a baking dish, I used a 8 x 8 square dish.

Next are the noodles, Cream Cheese mixture, the rest of the sauce, and your cheese. The original recipe didn’t have the mozzarella cheese but I had some in the fridge I wanted to use up.

Bake in a 350 degree oven for 25 minutes then top with french fried onions and bake an additional 5 minutes.

This stuff is awesome! Those of us that ate it loved it!

About Grace

When I was younger, I was constantly in the kitchen helping my mom bake. It was fun getting to play with the flour and always getting to lick the spoon. Iโ€™ve always expressed an interest in baking and now I feel that itโ€™s the right time for me to take over. I am a college student working towards a nursing degree as well as a full-time aunt to the sweetest little kids (they might pop up in some of the posts). Iโ€™ve learned most of what I know about baking and cooking from my mom, and I am continuing to self-teach through trial and error, which means plenty of sweets to be eaten. Read more...

Good for you, making it because it sounded good to YOU! You have to do that sometimes! Your spaghetti dish looks great. I love the addition of the onions on top.

I didn’t realize that Scooters Spaghetti was so similar to the one I made {#11} – I’ve been eyeing that recipe for so long! Kind of cool that I already pretty much know how it tastes – and it’s REALLY GOOD!!

I can relate on the spaghetti sauce needs to be just right for the family thing.

I have made a baked spaghetti, a long time ago! We enjoyed it but I haven’t made it again. I really like the sound of your recipe!

Don’t feel bad for making foods the way you like it! We have to do that for ourselves once in a while.

The final topping of French fried onion rings got my attention! Great idea and adds just the right amount of crunch to offset the easy-bite of the pasta. Thanks for sharing. I’m #28. Come visit when you can.

It might take some convincing to get my husband to try it with that much cream cheese, but I’m all for it! Maybe the fried onions will be enough to distract him ๐Ÿ™‚ Thanks for sharing the recipe and for stopping by my blog during the CCC!
