Sausage Balls

 

 

I know it’s early but the Holidays are almost here.

And I eat my way through the holidays.

Baking, nibble.

Cook, nibble.

Bake, nibble.

Wrapping, nibble.

Decorating, nibble.

Parties, lots of nibbles.

And there are always sausage balls around. Everywhere. We make them every year.

But I’ve never written the recipe down, until now. I can’t even tell you how I know how to make these, I do know I will change it up from time but the base is always the same.

Sausage balls

1 pound regular sausage
1 pound hot sausage
3-4 cups sharp cheddar cheese
1-2 cups seasoned bread crumbs
1 cup parmigiana cheese

Throw it all in a large mixing bowl

Then convince your child to mush it all together until everything is well combined.

I love kids in the kitchen, especially when they think this is fun!

Roll mixture into balls, about 1 inch big (bite size)

and place on wire rack placed on your cookie sheet.

I place I sheet of aluminum foil underneath, just for easier clean up.

Now sprinkle a little more parmigiana cheese on top of each ball

Bake in a 350 degree oven for about 30 minutes, until completely cooked and a golden brown on top.
Remove from oven.

and drain on a paper towel lined plate

These are great to make ahead of time. Just cut your cooking time by about 5 minutes and refrigerate or freeze. When ready to use, reheat in 350 degree over for about 15-20 minutes.

These went in the freezer for Thanksgiving but I know I’ll have to make more before Christmas, I always do.

And if you like a little crunch to your sausage balls, add 1-2 cups of chopped pecans or walnuts.

Ingredients

  • 1 pound regular sausage
  • 1 pound hot sausage

    Looks delicious! I love how they have two different kinds of cheese. I made some sausage balls a few weeks ago, but my pictures didn’t turn out, and by the time I realized it, they were GONE!

    Lesa, I’ll tell you a secret, that bowl is almost empty, I had to put aluminum foil under the sausage balls for the picture. The bowl was full when I put them in there but by the time I went to go get the camera and come back (not even 5 minutes) they were almost all gone!

    I did make a second batch for the freezer but since they were undercooked, they weren’t pretty enough for a picture!

    These were perfect on Thanksgiving day, Just pulled them out of the freezer, popped them in the oven and wallah, held everyone over for another hour until dinner was served!
