Garlic & Cheese Salmon Pasta – a rich and creamy garlic and cheese pasta that makes for a simple yet delicious dinner perfect for an at home date night or easy home cooked dinner for the kids!
I love social media. Not like getting on there and posting my whole life for everyone to see, but I love what other people do on social media.
I love the memes, the creativity, and of course, I wouldn’t be my moms daughter if I didn’t like to do a little people watching too. LOL!
I love the mindless scrolling on tiktok, especially when I get on the cooking and baking side of tiktok and its just nonstop seeing what people make in their kitchens.
So I guess this pasta is me showing you what I created in my kitchen this week.
I was a little scared jsut because the cheese I used was something I’d never had before and I was scared I was going to waste a whole dish on by putting the cheese in it, But it came out so good!
And you know the dish is good when the picky eaters in your family (in this case, my fiance and toddler) get up to get seconds.
Kal is way pickier than our son, and so I know I did a really good job when there’s a dish that has items in it he doesn’t like and he gets more after finishing the first serving.
And the best thing about this dish is that it only used 2 dishes! One for the cooking and one for the pasta!
Garlic & Cheese Salmon Pasta
- 2-4 salmon fillets
- Boursin garlic and herbs cheese 5.3 oz
- a couple handfuls of fresh spinach
- about 1 cup of grape tomatoes
- 1 tbsp minced garlic
- garlic powder
- onion powder
- italian seasoning
- crushed red pepper flakes
- 1 box of pasta of your choice (cooked)
- about 1/2 cup grated parmesan
Preheat the oven to 350 degrees.
In a casserole baking dish, put in the salmon fillets and the Boursin garlic and herb cheese. Add in the spinach, then the grape tomatoes and minced garlic. Sprinkle the seasonings on top, seasoned to taste.
Bake in the oven at 350 degrees for about 30-35 minutes so the salmon is fully cooked through the thickest part of the fillet.
Take out of the oven and use a fork to mix all the ingredients together while shredding the salmon fillets.
Add in the cooked pasta, and stir until the pasta is completely incorporated into the mixture.
Sprinkle the parmesan on top and serve while hot!
