Blueberry Oatmeal Bars – thin and crispy oatmeal bars loaded with a sweet blueberry filling!
As a new mom, and more specifically a breastfeeding mom, I’m always looking for new ways to increase and maintain my milk supply. I’m not the person to go buy those things that are sold for breastfeeding, just because I, personally, think they’re sold just to make money, and you can make a cheaper (and tastier version) at home.
I’ve grown bored of eating overnight oats, even tho they’re still a good treat every now and then.
But then I came across these Blueberry muffins, with the crumble topping, and I’m a sucker for a crumble topping. And so I thought, what if I make a Blueberry Crumble Bar, that has oats and blueberries, which are both good for milk supply?
I know it’s not the MOST healthy, but it’s better than nothing.
Blueberry Oatmeal Bars
For the crust and crumbles :
- 1 1/2 cups of all purpose flour
- 3 cups of old fashioned oats
- 1 1/2 cups of granulated sugar
- 1 cup of unsalted butter, melted
For the Blueberry filling :
- 3 cups of blueberries
- 1/2 cup of sugar
- 2 teaspoons of cornstarch
- 2 tablespoons of lemon juice
Preheat the oven to 350 degrees. Grease an 9×13 inch square baking dish and line the bottom with parchment paper.
Place the flour, oats, and sugar in a bowl. Stir in the melted butter. Set aside about 1/3 cup of the mixture for the crumbles. Press the remaining amount of the mixture into the baking dish.
Combine the blueberries, sugar, cornstarch and lemon juice in a medium sized bowl. Pour this into the baking dish.
Sprinkle the remaining crumble mixture on top.
Bake for 38-40 minutes, until the top becomes golden and the crumbles are crunchy. Lit it cool completely before serving.
