Birthday Cake Popcorn – snack on this treat that uses only butter, marshmallows, birthday cake mix, and popcorn!
So, I saw this Idea on TikTok, and it was such a good idea I didn’t even finish the video! I immediately closed the app, ordered the ingredients I figured I’d need from Walmart to be delivered, and got started!
Really, I figured it was like your average run-of-the-mill rice crispy treat but birthday cake flavored and with popcorn instead of cereal.
I think I was right. And if I wasn’t right, then I don’t care because this popcorn is too good to care.
This recipe reminds me of the time my Seester and I made popcorn balls one day and we made a whole mess of the kitchen. We were probably at the ripe age of 14 and we had no idea what we were doing.
It took us hours to figure it out and we ended up with maybe three total balls of popcorn. But that meant we were at least a little bit successful.
Anywhos, onto the recipe!
Birthday Cake Popcorn
- 1 bag of the poppable popcorn (or about 1/4 cup of popcorn kernels if making from scratch)
- a 16 oz bag of jumbo marshmallows
- 1/2 a stick of butter (1/4 cup)
- 1/4 cup of birthday cake mix
- sprinkles (optional)
Pop the popcorn in the microwave if using the poppable popcorn bags. If making from scratch, I used a popcorn maker from Target, and popped about 1/4 cup of popcorn kernels. Set aside.
In a large pot, melt the butter and marshmallows together. Make sure to stir constantly to ensure it doesn’t stick too long in one place and burn.
Once completely melted, add in the birthday cake mix and stir.
Remove from heat. Let sit for a minute to cool a tad. If the popcorn is added too soon, the popcorn will dissolve really quickly.
Go ahead and add in the popcorn, folding it in the marshmallow mixture gently to ensure all peices are covered with the marshmallow.
Add sprinkles on top for the birthday cake effect. Enjoy!
