Apple Pie Cookies – the cinnamon and apple flavors of one of the best kinds of pies in the form of a super soft cookie!
My fiance, Kal, loves a good apple pie. I remember this one time when we went to visit my dad in South Carolina, we went to Walmart to get a snack, and he bought a whole apple pie. He snacked on it the whole time we were there.
I’ve been thinking of what recipes to do for Fall and these Apple Pie Cookies were a no-brainer. I love the idea of turning something in one form into a different form. Like what’s normally a pie, is now a cookie.
And luckily, Kal likes to try my experiments. SO nothing goes to waste, because even if I think it was a bust, he’ll still eat it LOL. He’s my own personal garbage disposal.
Apple Pie Cookies
- 1/2 cup (1 stick) of softened unsalted butter
- 1 cup of granulated sugar
- 1 egg
- 1 tbsp vanilla extract
- 2 cups of all purpose flour
- a pinch of salt
- 1/4 tsp of baking powder
- 1/4 tsp baking soda
- 1 tbsp cinnamon
- 1 cup of apples, grated and peeled
Preheat the oven to 350 and line a cookie sheet with parchment paper, set to the side.
In a mixing bowl, beat the butter and sugar together until light and fluffy. Mix in the egg and vanilla.
In a separate bowl, combine the flour, salt, baking powder, baking soda, and cinnamon.
Slowing add the flour mixture into the batter and combine until all of the flour is mixed in completely.
Fold in the peeled and grated apples.
Scoop the dough into about a tbsp and a half sizes. place them 2 inches apart on the baking sheet.
Bake in the oven for a about 15-18 minutes. Remove for the cookie sheet immediately and place on a wire cooling rack.
