The toasty goodness of the marshmallows in these S’mores Truffles will make you feel like you have been sitting by the campfire.
This truffle is very reminiscent of campfire s’mores. The rich chocolate is filled with toasted marshmallows and then rolled in graham cracker crumbs.
When I was young I used to love the fall because it meant campfires and hay rides. As I have grown older the fascination with those two items has faded a little. I have, however, learned to take a blanket on the hay rides now so that I don’t get stuck by briars.
Making truffles is lots of fun but sometimes it can be a sticky mess. One of my tricks is to have a little bit of cocoa powder available for dusting my sticky hands. It does help to cut down on the mess.
Some people use gloves when making truffles but I would rather get my hands in it.
I toasted a whole pan full of mini marshmallows. All of them didn’t go in the truffles but they were all consumed.

S'mores Truffles
Ingredients
- 8 ounces of semi-sweet chocolate chips
- 2/3 cup of heavy cream
- 1 tablespoon butter
- 1 teaspoon vanilla extract
- 1/2 cup of toasted marshmallows
- 1 cup of graham cracker crumbs
Instructions
- Combine the chocolate chips and cream in a microwave safe bowl.
- Cook in the microwave in 30 second increments until completely melted.
- Stir in the butter, vanilla and marshmallows.
- Spread onto a buttered plate and cool in the refrigerator for approximately one hour.
- Section out small portions of the truffle mixture and roll into balls.
- Coat the balls in the graham cracker crumbs.
- Chill truffles completely.
Notes
I toasted the marshmallows by placing them on a pan and under the broiler for a few minutes until they were the right color.
