When she saw I was making it, she asked if I was making it for her birthday (not for a month still.) She always asks for this for her birthday and I sometimes will make it for her then but pie isn’t always the best choice for a now 12 year olds birthday with friends.
I made this pie for you. Yes I did. Because I wanted to. And because I wanted to make something green that wasn’t a vegetable. For St. Patty’s Day.
And I even talked my friends into making some things for you for St. Patty’s Day.

Grasshopper Pie

Ingredients
- 1 1/4 cup Chocolate wafer crumbs (I used chocolate graham crackers)
- 1/3 cup butter, melted
- 1 (6 ounce) package Andes mint wafers
- 4 cups miniature marshmallows
- 1/4 cup sugar
- 2 tablespoons butter
- 1/3 cup creme de menthe
- 1 1/2 cup heavy whipping cream, whipped
Instructions
- Combine chocolate wafer crumbs and melted butter, stirring till all combined. Gently press into a greased pie dish to create a loose crust. Bake at 350 degrees for 6-8 minutes.
- While crust is baking, cut mints up so you have some large pieces for garnishing and the rest smaller. This will happen anyway as you're chopping. Set aside.
- Combine Marshmallows, sugar and remaining butter in a double boiler (you can do this in a regular saucepan if you don't have a double boiler.) Cook until marshmallows are completely melted and well combined.
- Remove from heat and stir in Creme De Menthe.Let cool to room temperature.
- Fold in whipped whipped cream And your smaller bits of chopped mints. Pour into pie crust. Garnish with remaining chopped mints and freeze until firm.

Can I use mint syrup such as those to make mojito instead of creme de menthe? I’m now pregnant and would not like to use alcohol if possible. I’d really love to try this pie though!!

It would be helpful to know what size pie dish you use. My 9.5 inch was way too big for the amount of “crust”. Took a foil one from a frozen pie that is smaller – hope everything fits in it.

I use a 9 inch pie plate but if yours is a little large or smaller, don’t let it stop you from making this pie.

Just finsihed the pie. You probably did use a 9.5 inch pie plate. I will also do so next time, but will have to make more “crust” for it to go up the sides of the plate. The smaller pie plate was way too small and everything ran over. Not a good desert for those who have drawers in their freezer and not everything has fit in the pan/dish.
