Chocolate Chip Oreo Brownie Bars combine chocolate Chip cookies, oreos and brownies in one luscious bar. What’s not to love?
Busy weekend, son’s birthday on Saturday, Hubby’s birthday on Sunday…..
And neither one wanted a cake!
What’s wrong with them?
Isn’t the whole reason for acknowledging birthdays just an excuse to eat cake?
Must be something missing in the male DNA
That’s ok, I’ll make it work to my advantage, they can’t stop me, it’s MY kitchen!
Hubby does love my chocolate chip cookies and he loves brownies….
And My Kitchen Apron has a recipe that at least will make hubby happy,
Chocolate Chip Cookie Oreo Fudge Bars
The Oreos are just a bonus!
For the most part I followed this recipe but I did make a few modifications so I’ll give you what I did.
And just a warning…..these are decadent, do not cut these too big or you might be tempted to share with someone….
Oh and I changed the name of her bars because the fudge part is brownie mix and I kept confusing myself, so
Chocolate Chip Oreo Brownie Bars
1 cup butter softened (2 sticks)
1 cup granulated sugar
3/4 cup light brown sugar
2 large eggs
1 tablespoon vanilla
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
2 cups chocolate chips
1 package Oreos, whatever kind you have, we used the regular plain ones for these
1 package brownie mix, I used a 13 x 9 recipe box
Step one-make your cookie dough
Cream butter and sugars in medium bowl with a mixer. Add eggs and vanilla. Mix well. In separate bowl combine flour, baking soda, and salt. Slowly add dry ingredients to butter mixture until just combined.
Next add
1/2 cup shredded coconut
This is my secret ingredient for cookies, I put it in oatmeal, chocolate chip, nut, almost all cookies I make and it gives it that something extra. And you don’t really taste the coconut so even if you’re not a coconut fan, try it!
OK, we also threw in some other yummies we had

It’s a cookie dough base, throw in whatever you like.
Oh and don’t forget your Chocolate chips, add those now.
Now Spread cookie dough into a 9″ x 13″ baking pan lined with Parchment paper for easy removal.
Step two-easy, easy…
Place a layer of Oreo cookies on top of your cookie dough layer
Last step-brownie layer
Prepare brownie mix as directed on box, should be simple, but I was busy directing my daughter on the cookie dough layer and added an extra cup of water to mine, made mix very runny, we just made it work.
Oh and also added
3/4 cup of nuts, hubby loves nuts in his brownies!
Spread brownie batter on top of Oreo layer.
Bake at 350 degrees for 55 minutes (we had to bake for an extra 5 minutes due to the extra water in brownie mix)
Cool completely for storage or serve still warm with ice cream.
You can warm these back up in the microwave for 10-15 seconds for that just baked, fresh out of the oven, deliciousness! Thanks My Kitchen Apron, It’s not cake but it’s just as good!!!!!
