Spiked Strawberry Orange Coconut Smoothie #FreshNFruti

A Spiked Strawberry Orange Coconut Smoothie combines the flavors of the Caribbean with a splash of rum for a refreshing summer treat. You could make these without the rum for the kids, but you may want an excuse to keep them for yourself.

It’s almost summer. OK, not almost, but it will be here before you know it. We went from having the heater on, to 3 days of the windows being open, to turning on the air conditioning. Summer is just around the corner, trust me.

One of the benefits of summer is cold, frozen, icy treats. Like Ice cream and Popsicles. Like Fruti 100 % Natural Fruit Bars. And they’re Non-GMO Verified.

These bars are good! I found them at Sams and the box came in four flavors. I love that the flavors were packaged separately, made it so convenient to store. I knew the kids would be fighting over the Strawberry bars and the Caribbean bars so I left those in the freezer for after school snacks.

I decided to use the Pina Colada.  I had some strawberries just freshly frozen. I just needed some liquid, orange juice fit in perfectly. Have you ever used a popsicle to make a frozen drink? It’s really one of the smartest ideas around. Just thaw it out for a few minutes then pop it in the blender with whatever else you want.

A Spiked Strawberry Orange Coconut Smoothie is perfect for a Friday afternoon on the back deck.

Spiked Strawberry Orange Coconut Smoothie #FreshNFruti

Yield: 2 drinks

Ingredients

  • 2 Pina colada Frozen Fruti Bars
  • 2 cups frozen strawberries (fresh also works)
  • 1 cup orange juice
  • 1/4 cup Bacardi Rum (adults only)
  • Whipped cream (optional)

Instructions

  1. Let popsicle bars sit on counter for about 5 minutes to soften. Remove bars from sticks. Place all ingredients in Blender and blend until smooth. POur into glasses and top with whipped cream.
  2. For a kid friendly version, just omit the rum.

    Ok, yum! This looks awesome, definitely perfect for those summer nights in the backyard. I would have never thought of using popsicles to make a smoothie, great idea! Glad you posted at Cheerios & Lattes.:)

    What a great idea! I have some fruit bars in the freezer that we haven’t eaten in forever. What a great way to use them!! And whip on top? You’re killing me. Unfortunately I can’t have the spiked version for at least 5 more weeks… Sigh. 🙂

    Perfect way to relax after a day of working in the yard! Luckily in my house we no longer have to keep track of which smoothies (or “mojitos”) are kiddie friendly. When we were in Hawaii some years ago, a waiter gave my then 16 year old the wrong drink and she fell asleep on the restaurant table! 🙂
