Pumpkin Spice Oatmeal Cookies – Pumpkin, Pumpkin Spice, and Oatmeal all combined to make a delicious fall treat, and a sweet Pumpkin Spice glaze on top to bring it all together!
It’s officially Fall! I mean, it’s officially been Fall for a few days, but this is my first official Fall recipe of the year (other than my Pumpkin Spice recipe).
This recipe is super easy and super yummy! Everyone in my house loved them, even my dad who doesn’t like pumpkins at all!
For the cookies, You’ll need:
- 2 sticks of softened butter, 1/2 cup tightly packed brown sugar, 1 cup of granulated sugar, 2 eggs, 1 tbsp of vanilla extract, 1/2 cup of pumpkin puree, 2 cups of all-purpose flour, 2 teaspoons of pumpkin spice, 1 teaspoon of cinnamon, 1 teaspoon of baking soda, 1 tbsp of baking powder, and 2 cups of lightly chopped oats.
Combine the softened butter with the granulated sugar and tightly packed brown sugar. Add in the eggs, one egg at a time. Mix in the pumpkin puree and vanilla extract.
In a separate bowl, combine the all-purpose flour, pumpkin spice, cinnamon, baking soda, baking powder, and lightly chopped oats.
Slowly pour in all the dry ingredients into the wet ingredients and mix until completely combined.
Spoon the cookies on a cookie sheet (I used a medium-sized cookie scoop), and bake in the oven at 350 degrees for about 12 minutes.
Once done baking, let cool on the tray for a few minutes before transferring to a cooling rack to cool the rest of the way.
For the Glaze, you’ll need:
- a 14oz can of sweetened condensed milk, 2/3 cup of powdered sugar, and 1 teaspoon of pumpkin spice.
In a small bowl, pour the whole can of sweetened condensed milk in. Measure out the powdered sugar and pumpkin spice, and make sure to sift those into the bowl, or else you’ll be left with chunks.
To glaze, I dipped the cookies into the glaze and let them rest until the glaze set. On a few of them, I drizzled the glaze.

- 2 sticks softened butter

- 1 tsp baking soda
- 1 tbsp baking powder
- 2 cups lightly chopped oats
Glaze
- 14 oz can sweetened condensed milk
- 1 tsp pumpkin spice
- 2/3 cup powdered sugar
Instructions
- Preheat oven to 350 degrees
- In a medium-size bowl, combine both sugars with the softened butter, add in the eggs (one at a time), add in the vanilla and pumpkin.
- In a separate bowl, combine flour, pumpkin spice, cinnamon, baking soda and powder, and lightly chopped oats.
- Slowly mix in the dry ingredients with the wet ingredients.
- Spoon onto cookie sheet (i used a medium-sized cookie scoop) and bake for 12 minutes
- For the glaze, pour the sweetened condensed milk into a bowl and sift in the powdered sugar and pumpkin spice. Stir well.
- Drizzle over cookies or dip the cookies right in.
