Lemon Curd Parfaits

Lemon Curd Parfaits

I’m loving my Lemon Curd. I really encourage you to make some. But even if you don’t make some yourself, go out and buy some. You’ll find so many uses for it. So many simple things, like this dessert.

This is what my girls made for Mother’s Day for dessert – Lemon Curd Parfaits


I would have loved it no matter what because it was made with love, but it was truly wonderful, light, just the right amount of lemon, and I love Vanilla Wafers.

And I don’t think it took them 10 minutes to put it together.

Lemon Curd Parfaits

1 jar (8 ounces) Lemon Curd
1 container (8 ounces) Cool Whip
1 cup crushed Vanilla Wafers
2 tablespoons melted butter
extra Vanilla Wafers for garnish

 

Combine crushed cookies with melted butter and set aside.

In a medium bowl, fold Lemon Curd into Cool Whip till blended.

Now just layer in serving dishes. Crumbs, Cool Whip crumbs, cool whip, a little more crumb on top.

Add a cookie for garnish and serve.

I don’t have pictures of the process because I wasn’t involved in the making, just the eating!

Post script: Joan passed away in her sleep on October 22, 2015. She went to bed feeling nauseous (which is one of the signs of heart attacks in women) and never woke up. Please learn the signs of heart attack in women (they are different than for men) and if you have high blood pressure or family history of heart disease, don’t brush off nausea as just the flu. Joan made it very clear that she wanted her work to continue in the event of her death so her family is working to keep Joan’s dream alive. In the days following her death, Joan’s fellow bloggers started a twitter campaign #ChocolateForJoan and #chocolateeverydamnday. We hope you’ll join us in honoring Joan’s memory by having chocolate every day.

When I was younger, I was constantly in the kitchen helping my mom bake. It was fun getting to play with the flour and always getting to lick the spoon.
