Back towards the beginning of the month, Kimiko, who writes her own blog the Beachside Baker told me about the February Taste of Home issue. It was an issue all about CHOCOLATE!
Then, Alice mentioned there was even a recipe for Chocolate Ice Cubes in there. I was impressed. I was intrigued, I wanted that issue.
So next time I was in Walmart, as I was checking out, I spotted THE issue. In my cart it went. I’ve been drooling over the pages, dog-earing the pages. So many wonderful ideas in this issue.
And I have to confess, I had already done a Google search for Chocolate ice cubes online. I knew they would be easy. I knew it was the first thing I was going to make from this issue. As I was telling my oldest daughter about it, she said, “isn’t that just like a fudgesicle?”
I have the smartest kids. Quick search and she’s right!
Reading through all the different recipes, the main, really only, difference was the milk/cream issue.
So I did a little research for you.
I made 3 batches.
One using only milk, one using half milk and half cream and one using straight cream.
For a fudgesicle, cream wins hands down!
All were good, the cream just made it creamier, of course.
Now as an ice cube, being used in a drink, there was no noticeable difference. So use what you want.
Fudgesicles or Chocolate Ice Cubes
adapted from Taste of Home magazine
Fudgesicles and Chocolate Ice Cubes
Ingredients
- 1 cup milk or cream
- 1 tablespoon cocoa powder
- 1 tablespoon sugar
- 1/4 cup water
- 3/4 cup semi-sweet chocolate chips
Instructions
- Over low heat bring milk/cream, cocoa, sugar and water to a simmer. Simmer for about 5 minutes. Pour chocolate milk/cream mixture over chocolate chips (I had mine in a large measuring cup with a pour spout) and using a whisk, stir until chips are completely dissolved.
- Let mixture sit for 5 minutes before pouring into popsicle or ice trays. Freeze.
- Serve ice cubes in milk for a luscious glass of chocolate milk or add some Kahlua for the perfect adult treat.

Made the ice cubes with a variation: instead of semisweet chips and cocoa powder, I used white chocolate chips and white hot cocoa mix. I chilled a batch of cafe au lait and put them in that.
