Cookie Butter Cookies – flour, sugar, cookie butter, only take about 12 minutes to bake and come out warm and soft and you don’t even have to chill the dough!
Okay, so This is my first post in the new year, and my first post in a while… Well, let me just give y’all a quick little life update!
In January of last year, I started a practical nursing program, and then in February, I found out our family of 2 was becoming a family of 3 (a family of 5 if we count our dogs).
So the whole year of 2023 was pretty hectic, I mean being in nursing school is hard enough and so of course I had to make it super hard on myself and have a baby in the middle of it.
We had a beautiful baby boy, who was born 8 lbs 3.4 oz, on September 18th (2.5 weeks early), which is extra special because that also happens to be my dad’s birthday!
Oh and then I also grauduated my program and am now officially a Practical Nurse, and all I have to do now is take my boards!
But now that I’ve gotten y’all caught up, I’ll get on with the recipe!
Cookie Butter Cookies
- 1 stick of softened butter
- 1/2 cup of brown sugar
- 1/2 cup of white sugar
- 3/4 cup cookie butter (I used Biscoff)
- 1/4 cup of peanut butter
- 2 cups of all purpose flour
- 1 egg
- splash of vanilla
- 1 tsp baking soda
- 1/3 cup white sugar (for rolling)
Start by beating the butter, sugars, cookie butter, peanut butter, vanilla and egg using either a stand mixer or handheld mixer.
In a separate bowl, combine the flour and baking soda, then slowly add it into the cookie butter mixture about 1/2 cup at a time, making sure to scrape down the sides of the bowl to ensure its all combined.
The dough should come together nice and thick, and should not be too greasy or stick to your hands.
Roll them into equal sized balls, if I had to guestimate it would be about a tablespoon and a half amount of dough, roll the balls into sugar making the whole ball completely covered, then place them on a cookie sheet.
Bake in the oven at 350 degrees for 12 minutes.
They’ll be ready to eat the second they come out the oven! Except they will be hot, so be careful LOL!
These cookies had my whole house smelling so good, except for that one time on Christmas eve when we were making cookies for santa and we forgot they were in the oven (because I was like oh I don’t need a timer) and they got super burnt!

Instructions
- Preheat the oven to 350 degrees and line a cookie sheet with parchment paper or spray with nonstick spray.
- Beat the butter, sugars, cookie butter and peanut butter, egg, and vanilla in a stand mixer or handheld mixer. In separate bowl, combine the flour and baking soda. Add the flour mixture 1/2 cup at a time to the cookie butter mixture until all the flour is combined and the dough is formed. Make sure to scrape down the sides of the bowl. The dough should be thick and not greasy or stick to your hands.
- Roll in tablespoon and a half sized balls, roll them into sugar so that the balls are completely covered, then place them on a cookie sheet
- Bake for 12 minutes.
