Buckeye Brownies – ya know those good ole Buckeye treats you make at the holidays? Well, this is them, but in brownie form!
I’m so thankful my mom passed this recipe down to me and for the times I got to help her make them. While I was always her special helper in the kitchen growing up, Buckeyes were something she traditionally made with my brother CJ.
I typically would just watch and learn while they had their quality time together.
Even though I didn’t spend quite as much time making them with her as CJ did, still remember the recipe and make them each Christmas for when Santa comes to visit. Which since I’m a mom now, means sharing with Santa once the kid is asleep LOL.
Buckeyes are hands down the best treat for the holidays. Well, you can’t really judge that, because there are just too many treats and they are all so good!
But if I had to pick just a handful that were my favorites, the Buckeyes would be very high on the list.
Buckeye Brownies
- 1 cup granulated sugar
- 2 eggs
- 1/4 cup unsalted butter, softened (1/2 stick)
- 1 tablespoon vanilla extract
- 1/3 cup all purpose flour
- 1/2 cup cocoa powder
- 1/4 tsp baking powder
- pinch of salt
Peanut butter inside :
- 1 cup of peanut butter
- 1 cup of powdered sugar
- 1/4 cup unsalted butter, melted
preheat the oven to 350 degrees. Line an 8×8 baking dish with parchment paper.
Using a stand mixer or handheld mixer, beat the eggs and sugar together on a low speed for about 5 minutes until light and fluffy. Beat in the softened butter and vanilla.
Gently fold in the flour, cocoa powder, baking soda, and salt.
In a separate bowl, combine the peanut butter, powdered sugar, and melted butter. On a sheet of parchment paper, flatten the peanut butter dough into an 8×8 square.
Add about half of the bownie batter into the lined 8×8 baking dish, then place the peanut butter square on top. Add the rest of the batter onto the peanut butter and spread it out as much as possible.
Bake for 25-30 minutes, until a toothpick comes out mostly clean.
Rest in the pan for about 30 minutes before cutting in and serving.
