Chocolate Oatmeal Cookies – soft and rich chocolate oatmeal cookies filled with chocolate chips.
Oatmeal cookies are a secret pleasure of mine. I’m one of the rare people who enjoy oatmeal raisin cookies.
Really, any kind of cookie with oatmeal is good. I’m also not a picky person, I used to snack on raisins and Craisons.
Anywho, that’s beside the point. I was in the mood for oatmeal cookies but I also had a sweet tooth for some chocolate.
Not something that would be too chocolatey but would fill in for that sweet tooth.
My sister Cassie loves being my cookie tester (and every other kind of dessert tester).
She very thoroughly enjoyed these cookies, she took about half of the batch home with her.
Of course, my fiance Kal fought her and told her she couldn’t take any more than that.
Chocolate Oatmeal Cookies
- purpose flour
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- a pinch of salt
- 1/4 cup cocoa powder
- 1 cup softened butter (2 sticks)
- 1 cup tightly packed brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tablespoon vanilla extract
- 3 cups old fashioned oats
- 2 cups of semi sweet chocolate chips
In a medium sized bowl, combine the flour, cinnamon, baking soda, cocoa powder, and salt. Set aside.
Using a stand mixer or handheld mixer, beat the butter and sugars together until light and fluffy. Add in the eggs and vanilla. Beat until combined.
Using a spatula, fold the oats and chocolate chips into the mixture. Using a spatula to hand fold in these ingredients ensures the mixture won’t be over-mixed.
Taking about a tablespoon of the cookie batter, roll the batter into balls and place them about 2 inches apart on a lined or greased cookie tray. Bake in the oven at 350 degrees for 10 minutes.
Cool on the tray from about 5 minutes, then transfer to a wire rack to cool the rest of the way.
