Banana Pudding Pancakes are so moist and delicious. A great way to make breakfast more interesting.
There is a small restaurant in St. Simons Island, Georgia that makes the most amazing banana pudding pancakes. It is called Palmer’s Village Cafe.
There is always a long line waiting for breakfast at this small cafe. They have a wide variety of options.
Our favorite item on the menu is these pancakes.
I tried my best to recreate them at home.
The pudding makes them extra moist and the topping gives it an amazing crunch.
You don’t even need syrup unless you just want it.
Now you can make these several different ways. If you want to make your own pancakes or pudding then go for it.
If you are like me and not a morning person then used boxed mixes.
I used my favorite pancake batter and a made a box of banana cream pudding.
I do like to use a combination of oil and butter. It gives the pancakes more flavor and the oil keeps the butter from burning.
Once the pancake starts cooking then squeeze the pudding all over it. I used a squeeze bottle but you can also use a plastic bag and snip the corner off.
Then top it with crushed vanilla wafer cookies and get ready for a messy flip. It does throw a few crumbs all over the place but maybe you are better at flipping than I am.
Don’t leave it too long or the cookies will burn.

Banana Pudding Pancakes
Ingredients
- Pancake Batter
- 1 box of banana cream pudding, prepared
- 2 cups crushed vanilla wafers
Instructions
- Prepare pancake batter as directed.
- Prepare pudding as directed.
- Crush vanilla wafers.
- Heat oil in a pan.
- Pour in enough batter for one pancake. Once it starts cooking add the pudding to the top of the pancake. Cover the top of the pancake with crushed wafers.
- Flip and cook the wafer side of the pancake.
