These Chocolate Dipped Snickers Cookie Bars are an easy and fun treat for any cookie lover!
Hi everyone! I’m Lindsay from Life, Love and Sugar. I hope you all had a wonderful Christmas and are ready for the new year! To help usher it in with you, I decided to share a little chocolate which I know Joan loved.
These Chocolate Dipped Snickers Cookie Bars are more than your average cookie. Dipping them in chocolate takes them to the next level. If you’ve never tried a cookie dipped in chocolate, you need to put it on your list of next things to bake – pronto!
The moist and chewy cookie paired with the crunch of the chocolate is perfection. Plus, it’s more chocolate. Win-win.
To make the cookie bars, you’ll start by creaming the butter and sugars together. Don’t underestimate this step, it’s important. You should beat the butter and sugar together for at least 3 minutes. You’ll actually notice the color and texture of the mixture change and get lighter in color and fluffier, adding air to the batter.
Once the butter and sugars are creamed, add the egg and vanilla, then the dry ingredients. You should end up with a fairly thick dough that’s a little sticky.
Finish off the cookie dough with chopped Snickers and peanut butter chips. While I love the peanut butter chips, you could substitute those if you can’t find them in the store. Regular chocolate chips would be fine.
Once the bars are baked and sliced, the fun part is dipping them in chocolate. A smaller bowl is ideal so that the chocolate is a little deeper and easy to dip into. I should suggest shaking off the chocolate, but rather brushing the chocolate covered cookie bar against the edge of the bowl to remove the excess. Too much shaking could break the cookie and that’d be very sad.
Sprinkle the chocolate with a few chopped peanuts and let them dry. These really are a fun way to spice up your usual cookie. I hope you love them!
Chocolate Dipped Snickers Cookie Bars
Ingredients
- 3/4 cup salted butter, room temperature
- 1/2 cup dark brown sugar, lightly packed
- 1/2 cup sugar
- 1 egg
- 1 tsp vanilla extract
- 1 1/4 cups all purpose flour
- 1/2 cup cocoa (I used Hershey's Special Dark)
- 1 tsp baking soda
- 25-30 mini snickers, chopped
- 1/2 cup peanut butter chips
- 10 oz chocolate (I suggest a good melting chocolate like almond bark or candiquick)
- 1/4 cup peanuts, chopped
Instructions
- 1. Preheat oven to 350 degrees and line a 9 inch square pan with parchment paper or aluminum foil.
- 2. Cream butter and sugars together until light and fluffy, about 3-4 minutes.
- 3. Mix in egg and vanilla extract.
- 4. Add flour, cocoa and baking soda and mix until combined.
- 5. Stir in chopped snickers and peanut butter chips. Dough will be thick and sticky.
- 6. Spread the dough evenly into the pan. Bake for 18-20 minutes. Cookie might still look a little undercooked, but will finish cooking as it cools.
- 7. Remove from oven and allow to cool completely.
- 8. Use parchment paper or aluminum foil to lift cookie out of the pan, then slice into 8-10 bars.
- 9. Place melting chocolate in a small bowl and melt according to package directions.
- 10. Dip cookie bars into chocolate, then set on parchment paper to dry and sprinkle with chopped peanuts.
