Birthday Blondies because everything is better with sprinkles!
Everyone knows what a Brownie is but how many really understand what a Blondie is? It’s not just taking the cocoa out of a Brownie. Blondies are more of a cross between a Brownie (minus the cocoa) and a Cookie. Loaded with brown sugar, you can change these bars up in so many yummy ways.
It was my daughter’s birthday last week. I love making treats for her class but honestly, I’m sick of making cupcakes.
As a class treat cupcakes aren’t practical anyway. Let’s face it, they’re hard to transport unless you have one of those fancy carriers and that’s only good if it’s a smaller class. I had to have 30 treats meaning 2 fancy carriers. I don’t even own one.
Then you have the kids that want to save the treat to take home. Umm, Cupcakes don’t travel well in kids hands. Mushed cupcake at the bottom of the book bag anyone?
And I’m not even going to go into the eating habits of 30 kids and cupcakes.
Luckily, my kids are happy to take any treat I choose to make to school.
I did dress these Blondies up with sprinkles, it was for a a Birthday treat after all. Birthday Blondies!

Birthday Blondies
Ingredients
- 1 cup butter, melted
- 1 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 2 cups all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 cups chocolate chips
- 1/4 cup colored sprinkles (jimmies)
Instructions
- Preheat oven to 350 degrees. Grease a 9x13 pan and set aside.
- In small bowl, combine flour, baking powder and salt, set aside.
- In mixing bowl combine butter and sugars, beating till well combined.
- Add in vanilla and eggs, beat again.
- Slowly add in flour mixture, being sure to scrape down sides of bowl while mixing.
- Fold in chocolate chips and sprinkles, reserving about a teaspoon of sprinkle to sprinkle on top.
- Gently spread dough in prepared pan. Sprinkle remaining sprinkles on top.
- bake for 18-22 minutes, until toothpick inserted in center come out clean.
- Let cool completely before cutting.

Hahaha! I totally agree with you about the cupcakes. I just made 40 for my son’s birthday party and had to transport them to the restaurant. What a pain in the butt! I don’t have a cupcake carrier either.. I put them in gift boxes but they still got crushed a little and some of the frosting was on the top of the boxes lol.
