Peanut Butter Cookie Cups-A mini peanut butter cup surrounded by peanut butter cookie, a double treat!
I know I’ve been absent. I’m sorry.
It happens every year. I get into the Holiday “funk” right before Thanksgiving. Why is it that they mush 3 great holidays into a 60 day period? Halloween, Thanksgiving and Christmas. All great holidays on their own.
Poor Thanksgiving this year isn’t even getting the time of day, coming so close after Halloween. I’m so glad we don’t have one of those huge get-togethers with 25 other people, all trying to cram around a few tables, no room to move, and by the end of the meal, everyone has forgotten why they were really thankful to be there in the first place.
Don’t get me wrong. We still do the big meal, Turkey, stuffing, mashed potatoes, gravy, beans, corn, rolls and whatever else the hubby finally decides he wants.
And of course dessert. That we have about 3 hours after the meal. It’s me, hubby, the kids and my mom. We all fit nicely around the table. We’ll all be able to talk to each other and remember what we’re thankful for.
As soon as all the dishes are washed and the turkey has been striped for meat with the carcass on the stove simmering up a beautiful broth, Christmas is on.
My tree will be set up in the living room, waiting patiently for decorations, hubby will start setting up his village. The stockings will be hung and over the weekend, we’ll get the outside decorations up.
You all remember my trauma as a child about Thanksgiving and dessert at my Grandma’s. For this reason, I always make sure I have an abundance of kid friendly choices at my house.
I’ll pull out some Chocolate Chip cookie dough out of the freezer and bake up a few trays, Turtle Bark will be present, I’m trying out a new fudge recipe tomorrow and these Peanut Butter Cookie Cups.
Kids like food with candy in it. Fast and easy to make and only one round in the oven. I was done from start to finish in less than 30 minutes.

Peanut Butter Cookie Cups
Ingredients
- 1/2 cup butter
- 3/4 cup granulated sugar
- 1/3 cup creamy peanut butter
- 1 egg
- 1/2 teaspoon vanilla extract
- 1 1/4 cup all purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 24-30 mini Reese's peanut butter cups
Instructions
- Beat butter and sugar together till creamy. Add in peanut butter and beat again till combined. Add egg and vanilla. Combine flour, baking soda and salt, gradually add in flour mixture till all combined. Roll into 1 inch balls. Place each ball into the cup of an ungreased mini muffin tin. Bake in a preheated 350 degree oven for 12-14 minutes.
- Immediately after removing muffin tin from oven press one Reese's cup into the center of each cookie. Let cool in pan for about 10 minutes before removing. Let cool completely on racks.
Notes
A few tips. Place Reese's cups in the freezer 30 minutes prior to using. If you'rte having trouble removing cookies from the muffin tin, slide a thin knife around edges then it should pop right out.
