There is nothing better than homemade cookies with a glass of cold milk to put life back in perspective.

Take my kids as an example. They can come home after school, full of excitement over something great that’s happened. Or upset over a minor infraction. Or just worn out form a long day.

No matter what it is, when there are freshly made cookies on the counter, all becomes right with the world again. They slow down, find the smile that was lost, and enjoy a cookie or 2.  We can chat for a few minutes about their day. Catch up on the latest news at school. Before they run off to the computer, the television or outside to play with friends.

So I like having cookies available for them. Chocolate Chip Pecan Cookies are always a family favorite but I try to change it up.  Nothing seems as special when you have it all the time.

I always love making oatmeal cookies. I pretend they’re a little healthier than other cookies. These Oatmeal cookies stay soft and are lighter on the sugar in the cookie so when you drizzle the icing over top, you don’t give your kids a sugar high.

Iced Oatmeal Cookies

Ingredients

  • 1/2 cup butter
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/4 cup flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup quick cooking oats
  • for icing
  • 1 cup powdered sugar
  • 2-3 teaspoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Cream butter and brown sugar together with a mixer until fluffy, about 5 minutes. Add in eggs one at a time, mixing after each addition. Add in vanilla. Mix again.
  2. Combine dry ingredients. Just stir to blend, Add dry ingredients to butter mixture, one cup at a time, mixing well, until all added.
  3. Drop by spoonfuls onto a lightly greased or parchment lined cookie sheet. I use a small, 1 tablespoon cookie scoop.
  4. Bake in a preheated 350 degree oven for 9-10 minutes. remove from oven and let cool on racks before icing.
  5. To make icing, stir together ingredients until no lumps remain. Place icing in a plastic bag, Cut the end of one bottom corner to create a small whole. Drizzle over cookies.
