Strawberry Shortcake Dip – a quick, easy, and tasty recipe that will make your Valentine fall in love!
This Dip is a quick and easy treat that any and everybody will love. Have it as a snack, dessert, topping on pancakes or waffles, or as part of a charcuterie board.
Okay, I have a confession. This recipe was actually supposed to be a cheesecake dip, but apparently, there is a cream cheese shortage!
I checked everywhere… Publix, Kroger, then a different Publix and a different Kroger… and nothing.
So, I had to use a substitute for the cream cheese: whipped cream. I like to think of this substitute as a cousin to cream cheese when baking.
Although whipped cream is a good substitute, is does change the flavor so I had to change the name of the recipe to fit the flavor of the dish.
Instead of a cheesecake dip, we have Strawberry Shortcake Dip.
Strawberry Shortcake Dip only calls for 2 ingredients: strawberry syrup and whipped cream. (And look at how beautiful these strawberries are!)
I used my mom’s recipe to make the strawberry syrup. Basically, her recipe calls for six cups of strawberries, a little water, and at least two cups of sugar.
Put the strawberries and water into a pot on medium heat and bring to a simmer for 10 minutes. The strawberries will begin to let out their own juice.
Continue to simmer and add your sugar. Simmer for another 10 minutes then let cool off the burner before cooling completely in the refrigerator.
Now for the whipped cream. You can use whatever kind of whipped cream is best for you, I chose to make homemade.
To make homemade whipped cream, just whip up some heavy cream using either a stand mixer or handheld mixer, until a stiff peak forms. Add powdered sugar to taste (add more or less depending on how sweet you want it).
The serving size is up to you, if you want a big dip, use a trifle bowl and layer the whipped cream and strawberry syrup. If you want a little snack bowl, use a regular bowl or cup and layer the whipped cream and strawberry syrup.
Strawberry Shortcake Dip
Ingredients
Strawberry Syrup
- 6 cups of strawberries
- 1/4 cup of water
- at least 2 cups of granulated sugar
Whipping Cream (can be homemade or store-bought)
- 1 pint of heavy whipping cream
- 1 1/2 cups powdered sugar
Instructions
- For the strawberry syrup, place the strawberries and water into a pot and bring to a simmer on medium heat. After 10 mins, add in the sugar. let simmer for another 5-10 minutes. Remove from heat and let cool for about 20 minutes then place in the fridge to finish cooling.
- For the whipped cream, whip the heavy whipping cream until it's thick enough to form a stiff peak. Fold in the powdered sugar.
- Layer whipped cream and strawberry syrup in your choice of large, medium, or small bowl or cup.
