Soft Glazed Cinnamon Cookies – these soft baked cookies have a rich cinnamon flavor and a creamy cream cheese glaze thats the perfect amount of sweet to cinnamon ratio to balance out the flavor!
Here me out… this recipe make 24 good size cookies… My family (which includes 3 people with teeth able to eat solids) ate these in one night.
I had to rush to get my pictures of them before my fiance got home and ambushed the kitchen. It’s safe to say they were a hit. And they will be the perfect addition to our holiday desserts on Thanksgiving.
Soft Glazed Cinnamon Cookies
- 2 sticks of unsalted butter, softened
- 1 1/2 cups of packed brown sugar
- a splash of vanilla (measure with your heart)
- 2 eggs
- 3 cups of all purpose flour
- 1/2 tsp of baking soda
- 1 tsp of salt
- 2 tbsp of cinnamon
- 8oz cream cheese, softened
- 1 cup of powdered sugar
Preheat the oven to 350 degrees.
Using a stand mixer or handheld mixer, beat the butter and sugar together for 2-3 minutes on a medium speed until the mixture is light and fluffy. Add in the eggs and splash of vanilla, measure with your heart. Slow down the speed to a lower setting and beat until completely combined.
In a separate bowl, combine the flour, baking soda, salt, and cinnamon.
Slowly add the flour mixture into the stand mixer. Make sure to scrape the sides of the bowl to ensure the flour is getting all the way incorporated.
Using a 2 tbsp cookie scoop, scoop the dough into balls and place evenly onto a cookie sheet. Bake for 9-11 minutes. Move them to a cooling rack after baking and allow to cool before frosting.
For the frosting, whip the cream cheese and powdered sugar together until fluffy. Spread the glaze on the cookies using a spoon and enjoy!
