It’s time for the Crazy Cooking Challenge again. And this one is right up my alley. FUDGE!
Oh darn, I’m going to have to make something chocolaty,
Something sinfully decadent. And the very best part….
I didn’t have to look for my recipe.
It came to me. Really it did.
A few weeks ago Ki, posted a picture on my Facebook wall.
It was this Sexy Fudgy Walnut Brownie.
And when Chocolate comes looking for you, you don’t just turn and walk away.
Not this chocolate anyway.
It called out to me.
Make me, you know you want to.
And I did Want to.
So I did. Make it.
And I did eat it.
And then I ate some more.
And I worried there wouldn’t be any left for the kids or hubby.
So I got hold of myself and waited to share the rest with them.
But only because I really love them, a lot.

Oh and one more really cool thing about Ki. She’s in India, half way around the world from me. I love it!
Well, apparently I didn’t read the post well enough and “fudgy brownies” didn’t qualify for the challenge so I’ve removed the link info so not to confuse anyone.
But this is still wonderful and you should try it!
Sexy Fudgy Walnut Brownies
1 cup cream or 1 1/4 cup unsalted butter (room temperature)
1 cup sugar
2/3 cup flour
3/4 cup semi-sweet chocolate chips, melted
2 tablespoons cocoa powder
2 tablespoons instant espresso diluted in 2 tablespoons water
2 teaspoons vanilla extract
3 eggs
1/8 teaspoon salt
1 cup chopped walnuts
Pinch of love
Line a baking pan with some foil or parchment paper and brush it out. Preheat oven to 350 degrees F.
You can do this entire recipe with a hand whisk, I did.
Ki gave an option of cream or butter, I went with the butter.
Cream butter and sugar together, till well combined.
Add in eggs and whisk till frothy. (I’ve always loved the word frothy)
Add the vanilla and espresso mix
I didn’t have espresso powder, can’t even find it around here so I used two packets of this
instant coffee.
Whisk again till all blended.
Add melted chocolate along with the cocoa powder and whisk till well combined. Whisk, whisk, whisk. I think I’m over using the word. Do it anyway.
Now add in the salt, flour, walnuts and love (and don’t you just love Ki for making sure we don’t leave out that last ingredient!) Fold it all into the mixture but do not over mix.
Pour batter into your baking pan.
Bake for about 25-30 minutes. Check with toothpick for doneness. It should come out clean with a few crumbs attached to it.
Remove from oven and serve hot or let cool. Sprinkle with some powdered sugar and serve.
I added a dollop of fresh whipped cream, ice cream would have been good too.
