Eggnog has always been one of my favorite Christmas drinks (besides hot chocolate) and it never fails to set the mood for Christmas. Its signature flavor of cinnamon and nutmeg really brings it together which is how I turned this super simple cake box mix into a delicious Eggnog treat.
I really wanted to use eggnog in a recipe for Christmas and make it into a delicious treat that anybody could make.
So as I was tossing around ideas, I opened up my baking closet, and yes I have a baking closet so that no one else in the house eats it, I saw all the ingredients right there and I just knew Eggnog Cream Cheese Cupcakes were the way to go.
All you need is a white cake mix, along with its associated ingredients, and cinnamon, and nutmeg.
For the glaze, it’s just cream cheese, powdered sugar, and eggnog. In the cake mix, I switched out the water for eggnog, and for the glaze, I followed a basic recipe for cream cheese frosting and substituted the butter for eggnog.
Well, I guess you can say I’m pretty bad at following directions and even though the glaze wasn’t exactly what I was expecting, it was so good!
I want to start a new tradition in the blog where at the end of my posts, I write about my nephew and whether he liked the recipe or not. I want to call it the “Edward Check”.
My mom used to include me in her posts a lot, and I want to do the same for him. As for the Eggnog Cream Cheese Cupcakes, it is definitely a yes from Edward!
Eggnog Cream Cheese Cupcakes
Ingredients
Eggnog Cupcakes
- White cake box mix
- 1 cup eggnog
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
Eggnog Cream Cheese Glaze
- 1/4 cup eggnog
- 4-ounce block softened cream cheese
- 2 cups powdered sugar
Instructions
Eggnog Cupcakes
- Preheat oven to 350'.
- Combine Cake Mix ingredients but use eggnog instead of water.
- Add in cinnamon and nutmeg and mix well.
- Line the cupcake pan and fill each spot about 3/4 of the way and put in the oven. For regular cupcakes, bake for 20 minutes, and for mini cupcakes, bake for 10 minutes.
- Once done, let cool for about 5 minutes.
Eggnog Cream Cheese Glaze
- While the cupcakes are baking, beat cream cheese and eggnog until smooth and slowly add in powdered sugar.
- Chill in the fridge for about 20 minutes to thicken.
- Spread onto cupcakes and enjoy!
Notes
I normally add an extra egg and use milk instead of water for most cake box recipes, but I found that the eggnog really moistened the cupcake as well as giving it extra flavor.
