You may have had bread pudding before but you have never had one like this. Creamy layers of brie add so much texture and richness of flavor to this Cranberry Brie Bread Pudding.
The combination of brie and cranberries is used in lots of dishes both savory and sweet so I combined them in this amazing bread pudding which would be great for brunch or dessert.
Most countries have recipes for a type of bread pudding because this is a wonderful way to make use of stale bread.
Some bread puddings are sweet and others are savory. Just by adding some rosemary or fennel you could make this into a savory dish.
My husband has never really cared for bread pudding because he found it to be a little boring but he ate two pieces of this one as soon as it came out of the oven.
Most bread pudding recipes include a cream sauce to add moisture but the brie added so much creamy goodness to this one that I decided not to add a sauce. Adding the butter on top also gives it an extra burst of flavor.
I used dried cranberries in this recipe however, you could use fresh cranberries. It would be best to cook them a little before adding them to the bread pudding.
Our family likes to have a light breakfast on Christmas morning so that we will be ready for our big lunch. The cranberries in this add a festive color so this will probably be our breakfast this Christmas.
So whether you use this dish for brunch or dessert it will be a big hit.
Cranberry Brie Bread Pudding
Ingredients
- 1 stale French baguette, torn into 2 inch pieces
- 3 cups milk
- 1 1/2 cups heavy whipping cream
- 6 eggs
- 3/4 cup sugar
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1 small wheel of brie
- 1 cup dried cranberries
- 1/4 cup butter, melted
Instructions
- Preheat oven to 350 degrees
- Tear bread into 2 inch pieces. If your bread isn't stale then you can leave the pieces sitting on a cookie sheet for 10 or 15 minutes until dry.
- Cut the rind off of the brie and cut it into small pats. Place the brie pieces in the refrigerator until ready to use.
- In a large bowl beat together the milk, cream, sugar, eggs, vanilla and cinnamon.
- Place 1/2 of the bread into a buttered 9x13 dish.
- Add 3/4 of the brie and 1/2 of the cranberries and cover with the remaining bread.
- Pour the liquid mixture over the bread and allow to soak for 10 minutes.
- Top with the remaining cranberries and the melted butter.
- Bake covered for 45 minutes and then uncovered for 15 minutes or until a knife inserted into the center comes out clean.
- Add the remaining brie on the top as soon as it comes out of the oven.
