I have always been a big fan of easy cookies. When I get a craving for that crunchy goodness I don’t want to even spend the time it takes to make chocolate chip cookies. I know – I’m crazy. BUT then I found out about palmiers and my life changed.
I know it’s a little dramatic to say a cookie change my life but you don’t even know the deliciousness of these cookies. Cinnamon sugar palmiers are crunchy, buttery and packed full of cinnamon sugar flavor.
Don’t worry if you don’t like cinnamon. You can customize these cookies to add just about any flavor to the sugar you love – ground ginger, pumpkin pie spice, cloves, nutmeg, etc. You get the drift. They all work.
Oh and the plus of using store bought puff pastry for this recipe is that it cuts the prep time in half! No need to make puff pastry yourself (unless you’re totally into that) when you can buy it from the store and it works perfectly. PLUS this recipe is sure to impress everyone who eats them. They will be shocked when you tell them it takes less than 30 minutes to make these pretty little cookies.
So get out that puff pastry and cinnamon sugar and get to baking! You’ll absolutely love these sweet cookies. I guarantee it!
Cinnamon Sugar Palmiers
Ingredients
- 2/3 cup white sugar
- 2 tablespoons cinnamon
- 1 piece store bought puff pastry, defrosted but still cold
Instructions
- Preheat oven to 450 degrees and line a baking sheet with parchment paper.
- In a small bowl add sugar and cinnamon. Mix together until combined. If you want more cinnamon flavor feel free to add more cinnamon.
- Spread half the cinnamon sugar over a large cutting board (or counter top) and place the puff pastry overtop the cinnamon sugar. Add the rest of the cinnamon sugar over top the puff pastry. Spread out until the whole puff pastry is covered.
- Using a rolling pin press gently on the puff pastry to help press the cinnamon sugar into the dough on both sides. This will also help roll out the seams in the puff pastry and stretch out the dough just a little.
- Roll both of the long sides tightly up until they meet in the middle. Cut cookies in 1/2 inch slices and carefully (you don't want to lose that cinnamon sugar filling) place onto the prepared baking sheet. Make sure to leave a little space between the cookies as they will puff up a bit while baking.
- Bake 6-8 minutes or until they are lightly browned and puffed.
- Remove from the oven and let cool.

This recipe looks great! I love pecans & was wondering if you thought that brushing the pastry with a little melted butter before the sugar & cinnamon & then adding some finely chopped pecans would work? I’ve only worked with puff pastry one time a long time ago. I love your recipes – please keep them coming!

Ooooh, that would be yummy. Go easy on the melted butter because you don’t want the puff pastry to get “soggy” and there’s already butter in the puff pastry but your idea should work quite well.
