Crock Pot Sweet Potato Casserole – It’s time for Thanksgiving, and one of the MUST HAVE dishes for a good Thanksgiving dinner is a sweet potato casserole, and these Crock Pot Sweet Potato Casserole are next level delicious!
I’m not a huge fan of sweet potatoes, but I love sweet potato casserole. It’s also my favorite dish to bring to the Thanksgiving dinner because there’s absolutely no way to screw it up.
Well I take that back, I’m sure someone could screw it up. But not me. I’m a professional.
And normally I make a classic sweet potato casserole using the canned yams, and marshmallows, but I love using my slow cooker and so I was like what if I make slow cooker sweet potato casserole?
Well, at first i tried it with the canned yams (because I can make it easy, that’s what I’m going to do) but it basically turned into sweet potato butter. Which i don’t know if that’s even a thing, but I might make it a thing. Like my yummy Pumpkin butter (haha, go try it, it’s good.)
So I was like okay so I’m gonna have to do this the hard way, and get actual sweet potatoes. Which doesn’t make it too much harder, but harder nonetheless than just opening a can and dumping into the pot.
And the best part of a good sweet potato casserole, is the marshmallows! And this recipe calls for a wholebag of them.
Now let’s get on with the recipe!
Crock Pot Sweet Potato Casserole
Here’s what you’ll need :
- 4-5 good sized sweet potatoes (about 2 pounds)
- 1 stick of unsalted butter (1/2 cup)
- 1 cup of tightly packed brown sugar
- 1/3 cup of maple syrup
- 1/2 teaspoon of salt
- 1 tablespoon of pumpkin spice
- a 10 oz bag of mini marshmallows
Turn the crockpot onto high to “preheat” while you get the other ingredients ready.
First, wash your sweet potatoes then peel the skin off of them. Rinse them ones more after all of the skin is removed.
Then cut the sweet potatoes into small pieces about an inch thick. You don’t want them too small or they’ll turn to mush, and you want them all about the same size so they cook evenly.
Add the sweet potatoes into the crock pot, as well as the butter (cut into slices), brown sugar, maple syrup, pumpkin spice and salt.
Put the lid on and let cook for 4 hours, checking on it and stirring occasionally.
Let it cook for about 4 hours on high with the lid on.
In the last 5 minutes, add the bag of marshmallows on top and put the lid back on.
Once all the marshmallows are melted (should only take a couple of minutes), the Crock Pot Sweet Potato Casserole is ready to serve.
Crock Pot Sweet Potato Casserole
Ingredients
- 4-5 good sized sweet potatoes (about 2 pounds)
- 1 stick of unsalted butter (1/2 cup)
- 1 cup of tightly packed brown sugar
- 1/3 cup of maple syrup
- 1/2 teaspoon of salt
- 1 tablespoon of pumpkin spice
- a 10 oz bag of mini marshmallows
Instructions
- Turn the crockpot onto high. cut up the sweet potatoes into about 1 inch squares and toss them in.
- cut the butter into slices and add them into the crockpot, as well as the brown sugar, maple syrup, salt, and pumpkin spice.
- let cook for 4 hours on high with the lid on. stir occasionally.
- in the last 5 minutes of cooking, pour the marshmallows on top and place the lid back on until they are completely melted. enjoy!
Notes
- do not use canned yams/sweet potatoes, after cooking for 4 hours they ill turn into mush.
