Peach Streusel Pound Cake

Ingredients

For Loaf

  • 3 sticks unsalted butter (1 1/2 cups)
  • 3 cups granulated sugar
  • 5 eggs, room temperature
  • 2 teaspoons vanilla paste or extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup heavy cream
  • 2-3 large peaches, cut into small pieces (about 2 cups or 1 lb frozen equivalent)

For Streusel Topping:

  • 1/2 cup packed light brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon kosher salt
  • 3/4 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cardamom
  • 1/2 cup cold unsalted butter, cut into pieces

Instructions

  1. Preheat oven to 325 F.

Create Streusel topping first.

  1. In a medium bowl, combine brown sugar, cinnamon, salt, 3/4 cup flour, 1/2 cup granulated sugar, and 1 teaspoon ground cardamom
  2. Add 1/2 cup cold butter pieces, and using your fingers, combine until a crumbly texture forms.
  3. Cover with towel and set aside in refrigerator.

For the loaf:

  1. Grease and flour a loaf pan. Set aside.
  2. Sift together flour, baking powder, and salt.Set aside.
  3. Using hand or stand mixer, cream together butter and sugar.
  4. Mix in eggs one at a time.
  5. Add vanilla extract.
  6. Slowly add dry ingredients to wet ingredients and combine thoroughly.
  7. Mix in heavy cream.
  8. Fold in peaches.
  9. Pour batter into prepared pan.
  10. Top with streusel.
  11. Bake for approximately 1 hour
  12. Let cake cool in pan until pan is warm to the touch.
  13. Remove cake from pan and let finish cooling on a cooling rack
  14. Slice and serve!
