Homemade Apple Cider – apples, cinnamon, spices, Apple Cider is just the best drink for fall.
So… I know the picture shows ice in the apple cider and apple cider is supposed to be drunk hot… but I have a confession…
I don’t like drinking hot drinks.
Yes, I am most definitely THAT person in the winter, who, even on the coldest day of the year, will still be drinking an iced coffee.
So before I get the comments about the picture and ice being in the cup of apple cider, I know, I know, but I can’t help myself.
However, you can drink it hot. Just don’t put the ice in it. Haha.
This was actually my first try at making Apple Cider and it came out absolutely perfect.
My boyfriend even drink the whole batch the same day I made it. I’m still not sure how he was still functioning after drinking it all.
And then he wanted me to make more and I’m like I will (after you go buy more apples), only if you pace yourself with it.
But the whole reason I made the apple cider is because I’ve had so many extra apples laying around from baking apple pies that I didn’t want to go bad.
So if you’re in the same position as me, and you’ve got a bunch of apples on your hand, this recipe is for you.
Anywho, onto the recipe.
Homemade Apple Cider
You’ll need :
- 12 apples (i used granny smith and honey crisp)
- 5 cinnamon sticks
- 1 1/2 tsp cloves
- 1 1/2 tsp all spice
- 2 tsp nutmeg
- 1 cup tightly packed brown sugar
- about 8 cups of water
- a large stock pot
Start by cutting the apples into quarters. This will ensure that all of those wonderful juices will be able to escape the apple and fuse into the cider.
In a large stock pot, toss in the apple quarters, cloves, all-spice, nutmeg and brown sugar. Add in about 8 cups of water or enough to slightly cover the apples in the pot.
Be careful, the apples will float. I learned this the hard way when I kept pouring in the water and the apples kept floating so when i put the lid on and the apples got pushed down, the water overflowed.
And water went everywhere.
I also probably didn’t use a big enough pot. But I wanted to use my dutch oven and be aesthetically pleasing.
So I guess what they say is true, beauty hurts.
Anywho, once you get everything into the pot and covered with water, put the lid on and let it simmer for 2-3 hours. Then take the lid off and cook for another hour.
Then strain out all the soggy apples and spices, pour the cider into an aesthetically pleasing container, and store in the fridge or drink while it’s still hot and fresh.
