These Orange Butter Cranberry Cream Scones are so moist and delicious. The combination of the flavors is perfect and they are so easy to make.
The first time that I had these was quite memorable.
Many years ago when our kids were very small my husband and I snuck away for a weekend at a bed and breakfast in the mountains.
We were so shocked to be able to not just get away for a little while but a whole weekend.
Our eighteen year old babysitter was very competent and we were at ease leaving the kids with her for several days.
The bed and breakfast was made up of several buildings that used to be a grist mill and the waterfall that went through the property was breathtaking.
Our first morning there the couple running the bed and breakfast made orange butter cranberry cream scones and they were so good.
I had never had a scone until that day. My thought was that those were something that the Queen of England ate and I would never experience them.
They are like the softest most pillowy biscuit that you have ever had with fruit mixed all through it.
Then I started to think, “What do the British mean when they say ‘biscuit’?”, and I found out it’s a cracker. Confusing to say the least for this Georgia girl but back to the story.
The bed and breakfast was wonderful with the exception of the bear that decided to come in the main house one night. That was shocking for me because I don’t live in bear country.
The couple that owned the place seemed way too calm about it for me but I guess they are used to it.
When we returned home it was funny because our babysitter was exhausted. She said that experience made her understand why we went to bed so early. Too funny.
Her father said that he should have paid us for leaving her with a toddler and an infant for three days because it was the best form of birth control that she could ever have.
She agreed and waited several years before starting her own family.
I have made orange butter cranberry cream scones many times since then and everyone loves them. Melting the orange butter over the hot cranberry cream scone just takes it to a new level of flavor.
Orange Butter Cranberry Cream Scones
Ingredients
Cranberry Cream Scones
- 2 cups all purpose flour
- 1 tablespoon baking powder
- 1/4 cup sugar
- 4 tablespoons butter
- 1 cup heavy cream
- 1 cup dried cranberries
Orange Butter
- 1/2 cup butter, softened
- zest of one orange
- 1 tablespoon of orange juice
Instructions
- Preheat oven to 400F degrees
- Mix the dry ingredients and cut in the butter until it looks like coarse sand.
- Add cranberries and cream stirring until just blended.
- Roll out on a lightly floured surface until 1/2 inch thick.
- Cut into 10 pieces and place on cookie sheet.
- Bake for approximately 20 minutes or until lightly browned.
- While the scones are baking cream together the orange butter ingredients and return to the refrigerator to chill until ready to use.
Notes
Don't overwork the dough. It just needs to come together enough to make a ball.
You can substitute any dried fruit that you like for the cranberries.
