Chocolate and marshmallows add a little extra love to a school lunch classic in these Peanut Butter Corn Flake S’mores Bars.
The past two weeks have been crazy and emotional for me. I packed up my apartment in Phnom Penh and moved home to Texas. I only had an hour at home before Becks and I left to take her to Purdue. It’s a two day drive from Austin so I got to spend a four days with my baby before saying goodbye until Thanksgiving. Gasp.
Driving away from Purdue was emotionally difficult. Even though I sent Becks home from Cambodia in January, we talked nearly every day through Facebook messenger. She’s not nearly so far away and we still talk nearly every day but she’s an adult now. It makes me tear up just thinking that. I’m so proud of the woman she has become.
My home is pretty crazy right now because most of my things are in storage and my 23-year old son took care of my house while I was gone. He and his roommate had different ideas about “organization” than I do so finding things has been a challenge. Fortunately, Becks had a maid service in before I got back so at least it’s not my son’s idea of “clean.”
I’m putting together my first care package for Becks. Obviously, I need to make something that mails well and can be made with ingredients and supplies I could find in my disorganized house. Becks and I both love peanut butter corn flake squares. They were one of my favorite school lunch desserts and they mail well.
I decided to dress them up a bit with chocolate and marshmallows (also Becks’ favorites). This recipe makes a HUGE batch of peanut butter corn flake S’mores bars so you might want to cut the recipe in half if you don’t have a bunch of teenagers ready to gobble it down.
You could cut cooking time by making one batch of the peanut butter corn flake mixture but you would need to work quickly to assemble the bars before the peanut butter layers solidify.Peanut Butter Corn Flake S’mores Bars
