Fall. There are just so many reasons to love fall.

Cooler weather. Our summer wasn’t  boiling hot this year but it was still sticky humid hot. And we broke records for rain. I think we’re still 20 inches over for the year!

Fall fashions. I’m a sweater girl. I love them. Just something comforting about pulling a sweater over your head. And how good do we all look in a comfy sweater, jeans and a hot pair of boots?

The colors. Maybe it’s because I’ve been leaving the middle school the past few weeks (I work the school store 2 days a week) just as the sun is rising over the ball field. Maybe it’s the harvest moon that was huge in the sky last week. Maybe it’s the leaves in the trees. The yellows, the reds, the burnt oranges. The deeper green, the browns.

I’m more aware of the colors in the fall.

I think, honestly, it’s the food.

The first time the temperature goes below 70 degrees, we start thinking casseroles, soups and pies. Apples, pumpkin and pecans become staples in the kitchen.

The aromas that start wafting out of kitchens everywhere.

It’s a feeling of comfort, like that favorite sweater.  Like these apples. Pure, easy, comfort food.

Cinnamon Apples

Ingredients

  • 2 large apples (tart apples like granny smith work best)
  • 1/4 cup brown sugar
  • 2 teaspoons cinnamon
  • 1 teaspoon flour

Instructions

  1. Peel, core and cut apples into chunks.
  2. Place all ingredients in a small saucepan with a lid. toss apples to coat. Cook covered over medium low heat for about 20 minutes, until apples are tender but not mushy, stirring occasionally.
  3. Remove from heat and let cool for 10 minutes before serving.

Notes

  1. These look a lot like the apples my grandmother used to make, except she canned hers. Do you know if I could use this recipe and then can them, if I made a huge pot? I really loved them, but I can’t find anyone in my family who knows how she made them. Thanks.
